When I'm craving a dinner that feels a little fancy but comes together fast, this steak frites salad is the kind of recipe I'm glad to have in my weeknight rotation. It’s inspired by the classic French bistro combo of steak and crispy fries, but here it’s served over a bed of fresh greens with a velvety homemade hollandaise that takes everything over the top. The result is a hearty, restaurant-worthy meal that’s surprisingly simple to pull off at home.

The fries (store-bought, so easy!) bake right in the oven while you sear a beautifully seasoned strip steak in a hot cast-iron skillet. Just a few minutes per side gives you juicy, tender slices that pair perfectly with the lemony salad and rich sauce. And yes, the hollandaise sauce couldn’t be easier: a quick blender version that’s bright, buttery, and ready in seconds.

Ingredients

for the fries and steak:

  • 1 (28-ounce) bag frozen french fries 
  • 2 lb. strip steak 
  • 3 Tbsp. olive oil 
  • 2 tsp. kosher salt 
  • 2 tsp. lemon pepper seasoning 

for the hollandaise sauce:

  • 2 sticks salted butter 
  • 3 large egg yolks 
  • Juice of 1/2 lemon 
  • Dash of hot sauce 
  • 1/4 tsp. kosher salt 
  • 1/4 tsp. black pepper 

for the salad:

  • 6 cups salad greens (about 4 ounces) 
  • 3 Tbsp. olive oil 
  • Juice of 1/2 lemon 
  • 1/4 tsp. kosher salt 
  • 1/4 tsp. black pepper 
  • 1/3 cup store-bought pickled onions 

Directions

    1. Step 1Bake the fries as the label directs. Meanwhile, prepare the steak: Coat the steak with 2 tablespoons olive oil. Season on both sides with the salt and lemon pepper. 
    2. Step 2Heat a cast-iron skillet over medium-high heat. Add the remaining 1 tablespoon olive oil, then add the steak and cook to desired doneness, 4 to 5 minutes per side for medium-rare. Transfer to a cutting board and let rest 8 to 10 minutes before slicing. 
    3. Step 3Make the hollandaise sauce: Melt the butter in a small saucepan over medium heat until hot and foaming.
    4. Step 4Meanwhile, combine the egg yolks and lemon juice in a blender and blend until thoroughly combined, about 15 seconds. With the blender running, slowly drizzle in the melted butter and blend until the sauce thickens, a few seconds more. Add the hot sauce, salt and pepper. Blend for a few more seconds. 
    5. Step 5Make the salad: Toss the greens in a large bowl with the olive oil, lemon juice, salt and pepper. Divide the greens among plates. Top with some steak, then add the fries. Spoon some of the hollandaise sauce over the top and garnish with the pickled onions. Serve the remaining hollandaise sauce on the side.
