Baked in individual ramekins, the cakes form two distinct layers as they cook: a soft, golden cake on top and a silky, spoonable lemon pudding underneath—similar to a chocolate lava cake but light, bright, and lemony. They’re one of the best mini desserts for year-round dinner parties, holidays, or any gathering that calls for something special. The best part? You can make them ahead, so they’re ready whenever your sweet tooth strikes!

The key to this recipe is pulling the cakes from the oven while the centers are still soft, which ensures the signature pudding layer forms at the bottom. Serve them with a dusting of powdered sugar, a dollop of whipped cream, and a few fresh berries for an elegant yet easy dessert.

Can lemon pudding cakes be made with other citrus flavors?

Yes. Other citrus fruits work well in this recipe—orange, Meyer lemon, or even grapefruit can give the cakes a slightly different but equally bright profile. Use fresh juice and zest for the best flavor.

Are lemon pudding cakes fully cooked when they are still soft at the bottom?

Yes! The cakes are meant to be soft and saucy, but since they bake in the oven for about 30 minutes, they're fully cooked and safe to eat.

Ingredients

  • 2 Tbsp. salted butter, melted and slightly cooled, plus more for the ramekins
  • 3 large eggs, separated 
  • 3/4 cup buttermilk
  • 1/3 cup all-purpose flour
  • Zest and juice of 2 lemons
  • 1/4 tsp. kosher salt
  • 1 1/4 cups granulated sugar
  • Boiling water, for the baking dish
  • Powdered sugar, for serving
  • Whipped cream, for serving
  • Fresh raspberries, for serving

Directions

    1. Step 1Preheat the oven to 350°F. Brush 6 (6-ounce) ramekins with butter and place in a 9-by-13-inch baking dish or roasting pan.
    2. Step 2In a large bowl, whisk together the egg yolks, buttermilk, flour, lemon juice, lemon zest, salt, melted butter, and 1 cup of the granulated sugar until smooth. Set aside.
    3. Step 3In a stand mixer fitted with the whisk attachment, beat the egg whites on medium speed until foamy, about 1 minute. Gradually add the remaining 1/4 cup granulated sugar, then increase the speed to medium-high and beat until stiff peaks form, about 3 minutes. 
    4. Step 4Stir a quarter of the egg white mixture into the egg yolk mixture until smooth, then carefully fold in the remaining egg white mixture with a rubber spatula until no streaks remain. Divide the batter among the ramekins (about 3/4 cup each).
    5. Step 5Carefully pour boiling water into the baking dish so that it comes about halfway up the sides of the ramekins. Carefully transfer the baking dish to the oven and bake until the cakes are puffed and lightly golden on top, 28 to 30 minutes.
    6. Step 6Using tongs and a spatula, carefully transfer the ramekins to a wire rack. Let the cakes cool for 10 minutes, then dust the tops with powdered sugar. Serve warm or at room temperature with whipped cream and raspberries. 

Tip: Lemon pudding cakes can be made up to a day ahead and stored, covered, in the refrigerator. Reheat gently at 300°F before serving, or enjoy at room temperature. Leftovers keep well, covered and refrigerated, for up to 3 days.
