If there’s one thing I love, it’s taking a fancy-looking classic and turning it into something friendly, fun, totally doable, and preferably bite-sized (ok, maybe two bites!). These mini beef Wellington bites are exactly that. They have all the magic of traditional beef Wellington—tender beef filet, savory mushroom duxelles, and flaky puff pastry—but in a form that’s perfect for parties, holidays, or any time you want to impress without losing your mind in the kitchen.

Each little bundle starts with a quick sear of the beef filet to lock in flavor, then the meat is tucked into buttery puff pastry along with a rich mushroom-and-onion mixture seasoned with thyme and dijon mustard. Once baked, the pastry turns golden and crisp while the beef stays beautifully tender inside. A sprinkle of flaky sea salt and fresh parsley finishes things off, and a dollop of horseradish cream sauce on the side makes them completely irresistible.

These mini beef Wellington bites are perfect holiday appetizers because they look elegant but are surprisingly straightforward to assemble. Even better, they’re a fantastic make-ahead option, which means less stress when guests arrive. Serve them alongside a bowl of champagne punch and you've got a party!

Beef filet, often labeled as filet mignon, is the best choice because it’s naturally tender and cooks quickly. Its mild flavor pairs beautifully with the rich mushroom filling and buttery pastry.

Duxelles is a finely chopped mixture of mushrooms, onion, and herbs cooked until dry and concentrated. Removing excess moisture is essential to prevent soggy puff pastry and ensure maximum flavor.

Can you make mini beef Wellington bites ahead of time?

These mini beef Wellington bites are an ideal make-ahead appetizer. They can be completely assembled without the egg wash and refrigerated for up to 24 hours before baking. Just cover the baking sheet tightly with plastic wrap to prevent the pastry from drying out as it chills. When you’re ready to serve, brush the Wellingtons with egg yolk and bake straight from the fridge, adding 2 to 3 extra minutes of bake time.

Ingredients

  • 1 Tbsp. salted butter
  • 1 Tbsp. olive oil
  • 1 1/2 lb. beef filet, cut into 12 (1-by-2-inch) pieces
  • 1 tsp. kosher salt
  • 1/2 tsp. black pepper
  • 6 oz. cremini mushrooms, stems removed
  • 1 medium onion, diced finely
  • 1 Tbsp. fresh thyme, minced
  • 1 Tbsp. dijon mustard
  • 1 (17.3-ounce) package frozen puff pastry (such as Pepperidge Farm), thawed
  • All-purpose flour, for dusting
  • 1 large egg, separated and beaten
  • 1 tsp. sea salt flakes
  • Chopped fresh parsley, for garnish
  • Bottled horseradish cream sauce, for serving

Directions

    1. Step 1Preheat the oven to 400°F. Line a sheet pan with parchment paper.
    2. Step 2In a large skillet, heat the butter and olive oil over medium-high heat. Sprinkle the pieces of beef with salt and pepper. When the butter has melted and the oil is hot, add the beef and sear for about 45 seconds per side. (The beef will only be partially cooked at this stage; it will continue to cook in the oven.) Remove and set aside to partially cool.
    3. Step 3Place the mushrooms in a food processor and pulse until finely chopped. Add the onion and thyme to the drippings in the skillet and cook over medium heat until translucent and fragrant, 5 minutes. Add the mushrooms to the skillet and stir to combine. Cook, stirring, until the mushrooms are golden and the liquid has evaporated from the skillet, 8 to 10 minutes. Remove the skillet from the heat, then add the dijon mustard and stir to combine. 
    4. Step 4Meanwhile, lay out one sheet of puff pastry on a lightly floured surface. Roll out the puff pastry into a 10-inch square. Using the fold lines as guides, cut the sheet into 3 long rectangles. Cut each rectangle in half crosswise so you have 6 pieces. Repeat with the second sheet of puff pastry.
    5. Step 5Place a small amount of the mushroom mixture (about 2 teaspoons) into the center of each piece of pastry. Top each with a piece of the beef. Brush the edges of the pastry with the egg white. Fold the puff pastry up and over the steak, pressing the edges together to completely encasing the beef and mushroom mixture inside. Place on the prepared baking sheet seam-side down. Repeat with the remaining pastry, mushroom mixture, and beef.
    6. Step 6Brush each bundle with the egg yolk and sprinkle with the sea salt. Bake until golden, 16 to 18 minutes. Allow to cool slightly. Garnish with the chopped parsley and serve with the horseradish cream sauce.
