When the craving hits for something warm, savory, and deeply satisfying, it’s hard to beat a pastrami sandwich. Rye bread, piles of pastrami, a swipe of mustard—no fuss, no frills, just a stack of good things coming together. And thanks to this homemade version, you don’t have to head to your local sandwich shop to get your fix.

With sandwich recipes like this one, the details matter. Start with good light rye, ask the deli for slightly thicker-cut pastrami, and don’t hold back on the spicy brown mustard. A crisp, tangy coleslaw cuts through the richness of the pastrami and Swiss cheese, adding just the right contrast for a perfectly balanced bite.

Once everything hits the griddle, the sandwich comes together fast—crisp, golden bread, melted cheese, and that little bit of crunchy slaw tucked inside. Slice it in half, add a pickle and some potato chips on the side, and you’ve got a hearty, nostalgic sandwich that’s absolutely worth making at home.

What is pastrami?

Pastrami is a cured, seasoned, and smoked beef—most often brisket or navel—that’s thinly sliced and piled high on sandwiches. Made famous in New York by Jewish immigrants, it’s known for its bold, peppery crust and tender, juicy texture.

What is rye bread and what is a good substitute for it?

Rye bread is made with rye flour, which gives it a subtle tang that pairs well with rich meats like pastrami. Light rye works best here. If you can’t find it, marble rye or sturdy sourdough are good substitutes, though the flavor won’t quite be the same.

What’s the difference between a pastrami sandwich and a Reuben?

A Reuben is typically made with corned beef (though pastrami is sometimes used), sauerkraut, Swiss cheese, and Thousand Island dressing, all layered on rye bread. Ingredients

For the Coleslaw:

  • 3 Tbsp. apple cider vinegar
  • 1 tsp. celery seeds
  • 1 tsp. dijon mustard
  • 1/2 tsp. kosher salt
  • 1/4 tsp. black pepper
  • 2 Tbsp. olive oil
  • 1/2 small head green cabbage, thinly sliced (about 5 cups)
  • 1 carrot, shredded or cut into matchsticks

For the Sandwiches:

  • 4 Tbsp. salted butter, at room temperature
  • 8 slices rye bread
  • 3 Tbsp. spicy brown mustard 
  • 1 lb. sliced pastrami
  • 4 slices Swiss cheese (about 4 ounces)
  • Dill pickles and potato chips, for serving

Directions

    1. Step 1For the coleslaw: In a large bowl, whisk together the vinegar, celery seeds, dijon mustard, salt, and pepper. Slowly drizzle in the oil while whisking until combined. Add the cabbage and carrot and toss to coat. Let sit for 30 minutes. 
    2. Step 2For the sandwiches: Spread 3 tablespoons of the butter on one side of the bread slices.
    3. Step 3Flip half the bread buttered-side down and spread with some of the spicy brown mustard. Top each with some pastrami, a large scoop of coleslaw, and a slice of Swiss cheese. Press down to compress the sandwiches a bit. Spread the unbuttered side of the remaining bread with a little more mustard and place on top of the sandwiches, buttered-side up.
    4. Step 4In a griddle or large nonstick skillet, melt the remaining 1 tablespoon butter over medium-low heat. Add the sandwiches and cook, pressing gently with a spatula, until the bread is golden and crisp and the cheese is melted, 2 to 3 minutes per side. 
    5. Step 5Slice each sandwich in half and serve hot with pickles, potato chips, and extra coleslaw on the side.

Tips: The coleslaw can be made up to 24 hours in advance and stored, covered, in the refrigerator; give it a quick toss before using. Assemble and griddle the sandwiches just before serving so the bread stays crisp and the cheese melts properly. Leftover cooked sandwiches don’t hold well.
