No-Bake Raspberry Cheesecake Bars

Oh, have I got a recipe for you.

These raspberry cheesecake bars may just be the easiest, most delightful, make-ahead-friendly, no-bake dessert in the entire universe.

Here's the rundown: You whip up the creamy cheesecake filling right in a blender, spread it over a graham cracker crust, then swirl raspberry preserves—straight from the jar—over the top. Add a few fresh raspberries, pop the whole thing in the fridge, and like magic, it’s ready to slice and serve in about three hours. Aren't no-bake desserts wonderful in that way?

I like to slice the whole thing into squares, but you could do little bars if you like. The most important part is that you make sure each one gets a raspberry on top! This is one of my favorite raspberry recipes to make for a cute Valentine's Day dessert, Easter treat, or Mother's Day surprise, but they're also perfect for those blazing summer days when it's too hot to turn on the oven. Cheesecake recipes don't get any easier than this!

Can you use a different flavor of preserves?

Yes! This recipe works well with other flavors of preserves like strawberry, blackberry, or blueberry. Choose your preserves, then grab the coordinating fresh fruit for topping!

Can you freeze no-bake raspberry cheesecake bars?

Yes, these bars hold up well in the freezer! If you plan to freeze them, hold off on adding the fresh raspberries on top. After chilling, wrap the bars (sliced or unsliced) in a layer of plastic wrap followed by foil, or place them in an airtight container. Freeze for up to three months. Thaw overnight in the refrigerator, then top with fresh raspberries before serving.

Ingredients

For the crust:

  • Nonstick cooking spray
  • 18 graham cracker sheets
  • 1/3 cup granulated sugar
  • 12 tbsp. (1 1/2 sticks) salted butter, melted

For the filling:

  • 16 oz. cream cheese, softened
  • 2 c. vanilla yogurt (Greek or regular)
  • 1 cup powdered sugar
  • 1 Tbsp. vanilla extract
  • 1 (8-ounce) container frozen whipped topping (such as Cool Whip), thawed
  • 1/3 cup raspberry preserves
  • 20 raspberries

Directions

    1. Step 1For the crust: Line a 9-by-13-inch baking pan with parchment paper, allowing a couple of inches of overhang on the longer sides. This will help you remove the cheesecake once set. Spray with nonstick cooking spray.
    2. Step 2Place the graham crackers in a zip-top bag and use a rolling pin to crush into fine crumbs (you should get about 3 cups). Transfer to a large bowl along with the granulated sugar and melted butter. Mix well and add to the bottom of the lined pan. Press the mixture firmly and evenly into the bottom of the pan, then set aside.
    3. Step 3For the filling: In a blender, combine the cream cheese, yogurt, powdered sugar, and vanilla, then blend until smooth. Transfer to a large bowl. Fold in the whipped topping. Pour the mixture over the top of the prepared crust and smooth. Add spoonfuls of the preserves to the top and, using a skewer or knife, swirl the preserves. Arrange the raspberries in a grid across the pan. Cover and refrigerate until completely chilled and firm, about 3 hours.
    4. Step 4Using the parchment sling, carefully lift out the cheesecake and transfer it to a cutting board. Using a chef’s knife, slice the cheesecake into 16 or 20 squares, each with a raspberry on top.

Tip: The bars can be stored in an airtight container in the refrigerator for up to 4 days.
