Ingredients

  • 4 Tbsp. salted butter, melted, plus more for the baking dish
  • 2 (10.5-ounce) cans cream of chicken soup
  • 2 cups sour cream
  • 1/4 tsp. kosher salt
  • 1/4 tsp. black pepper
  • 1 Tbsp. plus 1 teaspoon poppy seeds
  • 1 rotisserie chicken, skin removed, meat shredded (about 4 cups meat)
  • 6 cups ridged potato chips (about 6 ounces)

Directions

    1. Step 1Preheat the oven to 350˚F. Butter a 9-by-13-inch baking dish.
    2. Step 2Whisk together the cream of chicken soup, sour cream, salt, pepper and 1 tablespoon of the poppy seeds in a large bowl. Add the chicken and toss to coat. Transfer to the prepared baking dish and spread in an even layer.
    3. Step 3Place the potato chips in a large resealable plastic bag and lightly crush them. Add the melted butter and remaining 1 teaspoon poppy seeds to the bag and shake to coat. Evenly sprinkle the crushed chips over the casserole. Bake until golden brown and bubbly, 35 to 40 minutes. Let sit 10 to 15 minutes before serving.
