Sweet and Salty Easter Snack Mix

I can't be trusted next to a bowl of this sweet and salty Easter snack mix. It's good... too good.

The sweet comes from M&M's (in the perfect pastel palette for spring!), the honey butter that coats every delicious morsel, and a white chocolate drizzle that goes on top. The salty comes from crunchy cereal, mini pretzels, and salted almonds. And the Easter part is just there because this is such a dadgum cute and festive treat to bring along to parties, egg hunts, or whatever is on your calendar!

Can you use different nuts in Easter snack mix?

Absolutely. Just about any roasted, salted nut will work, like peanuts, cashews, or pecans. If you're not a fan of nuts, you can also leave them out.

Can you make Easter snack mix ahead of time?

Yes! This snack mix will stay good for up to a week in an airtight container at room temperature. If you want to make it further in advance, it'll keep for up to a month in the freezer.

Ingredients

  • 4 cups corn, wheat, and/or rice cereal squares (such as Chex)
  • 2 cups mini pretzels
  • 1 cup salted almonds
  • 4 Tbsp. salted butter
  • 1/4 cup honey
  • 1/4 cup sugar
  • 1 tsp. ground cinnamon
  • 1 tsp. vanilla extract
  • 1/2 cup white chocolate chips
  • 2 tsp. coconut oil
  • 1 cup pastel candy-coated chocolates (such as M&M's)

Directions

    1. Step 1Preheat the oven to 250°F. Line a rimmed baking sheet with parchment paper. In a large bowl, combine the cereal, pretzels, and nuts.
    2. Step 2In a small saucepan, cook the butter, honey, and sugar over low heat until bubbling and combined, about 2 minutes. Stir in the cinnamon and vanilla until incorporated. Pour half of the butter mixture over the cereal mixture and toss until coated. Add the remaining butter mixture and toss again until well coated.
    3. Step 3Spread the snack mix on the prepared baking sheet in an even layer. Bake, stirring every 15 minutes, until toasted and just beginning to dry out, about 1 hour.
    4. Step 4In a small microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave on low power in 30-second intervals, stirring between each, until smooth and melted. 
    5. Step 5

      Drizzle the chocolate mixture over the snack mix on the baking sheet, then immediately sprinkle with the candy-coated chocolates. Let cool completely at room temperature to allow the chocolate to set, about 30 minutes. Break apart into small clusters.
