If there’s one thing my family never gets tired of, it’s pancakes—especially when they’re piled high and loaded with blueberries. But one busy morning, when I wanted something a little more portable, I started dreaming up a way to bring those same cozy, buttery pancake flavors into a grab-and-go treat. Enter these blueberry pancake muffins! They’ve got everything you love about a classic stack—tender crumb, juicy berries, and just the right touch of sweetness—baked into a fluffy muffin that’s easy to make ahead.
These are especially perfect for springtime gatherings like Easter brunch or Mother’s Day, when you want something a little extra special on the table without a lot of fuss. And let me tell you, that sweet maple glaze drizzled over the top? It’s what really seals the deal, giving each muffin that unmistakable pancake-and-syrup finish.
Whether you’re hosting brunch or just need a little morning pick-me-up, these muffins are a sweet, simple way to make any day feel a bit more special.
What makes these muffins taste like pancakes?
The combination of buttermilk, vanilla, and a soft, tender crumb mimics classic pancakes, while the maple glaze adds that signature syrup flavor I love.
Can you make blueberry pancake muffins ahead of time?
Absolutely! Bake the muffins in advance and store them in an airtight container for up to three days. Add the glaze just before serving for the best texture.
Can you freeze blueberry pancake muffins?
Yes, these muffins freeze really well! Let them cool completely, then freeze them (unglazed) for up to two months. Thaw the muffins and glaze them just before serving so it stays smooth and creamy.
