Asparagus is one of my favorite foods on planet Earth, and this cheesy, crispy, parmesan-crusted version is good enough to eat straight off the pan as a snack! The asparagus itself is perfectly cooked, but it’s the topping that makes it more exciting. You get the buttery crunch from the breadcrumbs, the saltiness of the cheese, the brightness of the lemon, the bite of fresh garlic, and a tiny bit of heat from red pepper flakes. Pop it in the oven so everything gets toasted and golden and try not to eat the whole bunch before dinner. Or do—vegetables are good for you!

How do you trim asparagus?
It couldn’t be simpler: just grab a bunch in your hand and use a knife to lop off 1 to 2 inches from the bottom of the stalks. This part of the asparagus can be tough and woody, so it’s best to remove it. You can also snap off the ends with your hands if you’d rather!

Ingredients
- 1 bunch asparagus, trimmed (1 to 1 1/2 pounds)
- 1 Tbsp. olive oil
- 1/2 tsp. kosher salt
- 1/2 tsp. black pepper
- 1/4 tsp. crushed red pepper flakes
- 2 tsp. grated lemon zest, plus 1 lemon, cut into wedges for serving
- 1 Tbsp. salted butter
- 1/3 cup panko breadcrumbs
- 1 garlic clove, finely chopped
- 1/2 cup grated parmesan (about 2 ounces)
Directions
- Step 1Preheat the oven to 425°F.
- Step 2On a rimmed baking sheet, arrange the asparagus in a single layer. Drizzle with the olive oil and sprinkle with the salt, black pepper, crushed red pepper flakes, and lemon zest. Gently toss to coat, then spread the spears in a single layer.
- Step 3In a small skillet, melt the butter over medium heat. Add the panko and cook, stirring frequently, until fragrant and golden, 2 to 3 minutes. Remove to a medium bowl. Stir in the garlic and ¼ cup of the parmesan.
- Step 4Sprinkle the asparagus with the breadcrumbs across the middle of the spears, leaving the tips and bottoms exposed. Then sprinkle the remaining ¼ cup parmesan over the breadcrumbs.
- Step 5Roast until the asparagus is tender and starting to color and the parmesan breadcrumbs are golden brown, 10 to 12 minutes. Serve with lemon wedges.
