When warm weather hits, I’m always tempted to whip up a round of margaritas, and this new spicy pineapple version is really hard to resist. It’s a twist on a classic spicy margarita because it’s made with mezcal, which gives it the most delicious smoky flavor. If that’s not your thing, you can easily sub in tequila blanco for something a little more traditional. Apart from the booze, this margarita also has fresh jalapeño, which gives it a good kick, along with pineapple juice and lime juice for some sweetness and tang that balance everything out. Is it 5 o’clock yet?

This margarita is perfect to make for Cinco de Mayo, the Super Bowl, or just a lazy evening on the porch. If you need more inspiration, here are a few roundups of my favorite margarita recipes and summer cocktails to fuel your celebration!

Can you make spicy pineapple margaritas ahead of time?

Yes, this cocktail is perfect for making ahead. The margarita can be made up to five days in advance and stored in the fridge. Wait to prepare the pineapple garnish and rim the glasses until just before serving.

Can you double this recipe?

Absolutely! You can easily double, triple, or even quadruple it if you’re making margaritas for a crowd. Since everything is mixed together in a pitcher, it’s an especially easy recipe to scale up for parties.

Ingredients

  • 1 cup mezcal or tequila blanco
  • 1 cup pineapple juice
  • 1/4 cup orange liqueur (such as Cointreau or Triple Sec)
  • 1/4 cup agave or simple syrup
  • 1/4 cup fresh lime juice, plus 1 lime wedge
  • 1 jalapeño, thinly sliced
  • 1 Tbsp. coarse salt
  • 1 tsp. chili-lime seasoning (such as Tajin)
  • 4 pineapple triangles, for garnish (optional)

Directions

    1. Step 1In a large pitcher, combine the mezcal, pineapple juice, orange liqueur, agave, lime juice, and jalapeño slices. Lightly muddle the jalapeño to release its flavor. Refrigerate until chilled, 1 to 2 hours, or add ice if serving right away.
    2. Step 2When ready to serve, run the lime wedge around the rims of 4 glasses. On a small plate, mix together the salt and chili-lime seasoning, then dip the rims of the glasses into the mixture to coat.
    3. Step 3Fill the glasses with ice and divide the margarita among them. Garnish with pineapple triangles, if desired.
