Hey friends, here’s a fantastic new way to make chicken breasts!

I don’t know about you, but I can never have enough chicken breast recipes, and this creamy Tuscan stuffed chicken is ridiculously good—and pretty quick, too. Each breast is stuffed with a thick slice of fresh mozzarella, a handful of spinach, and some sun-dried tomatoes, which add such a nice sweet and savory kick. Then there’s the sauce. Sauces make my world go round, especially ones as rich, creamy, and absolutely dreamy as this one. If you’ve ever made Marry Me Chicken, this sauce is similar, but with some lemon added, so it’s extra bright and fresh. I could eat it with a spoon!

This is one of those recipes that’s easy enough for a weeknight but delicious enough for company. Try it soon and let me know what you think!

Can you make creamy Tuscan stuffed chicken ahead of time?

You can stuff and sear the chicken breasts up to one day ahead. Let them cool, then store them in an airtight container in the refrigerator. Wait to make the sauce and bake the chicken until just before serving.

What do you serve with creamy Tuscan stuffed chicken?

Any sort of carb to sop up all of the wonderful sauce! Think cooked rice (here’s the best way to cook white rice if you need a refresher), mashed potatoes, pasta, or just a slice of crusty bread.

How long does leftover creamy Tuscan stuffed chicken last in the fridge?

It will stay good for up to three days when stored in an airtight container in the refrigerator. Reheat it in a 350°F oven or on the stovetop over low heat until warmed through.

Ingredients

  • 4 (6- to 8-oz.) boneless, skinless chicken breasts
  • 1 tsp. kosher salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. Italian seasoning
  • 4 oz. fresh mozzarella, sliced 1/4-inch thick
  • 1/4 cup drained and roughly chopped sun-dried tomatoes packed in oil
  • 1 cup baby spinach
  • 3 Tbsp. olive oil
  • 1 Tbsp. salted butter
  • 2 shallots, minced
  • 3 garlic cloves, minced
  • 1/2 tsp. crushed red pepper flakes
  • 1/2 cup dry white wine or chicken broth
  • 3/4 cup chicken broth
  • 3/4 cup heavy cream
  • 1/2 cup grated parmesan cheese (about 2 oz.)
  • 1/2 tsp. grated lemon zest, plus 1 Tbsp. lemon juice
  • 1/4 cup fresh basil leaves, torn
  • Crusty bread or rice, for serving

Directions

    1. Step 1Preheat the oven to 375°F.
    2. Step 2Pat the chicken dry with paper towels. Using a sharp knife, cut a deep pocket into the side of each breast, being careful not to cut all the way through. Season the inside and outside with the salt and the black pepper. Sprinkle the inside of the pockets with the Italian seasoning.
    3. Step 3Stuff each breast with some mozzarella, 1 tablespoon of the sun-dried tomatoes, and a handful of the spinach. Press the edges closed and secure with toothpicks as needed.
    4. Step 4In a large skillet, heat 2 tablespoons of the olive oil over medium-high heat. Add the chicken and sear until golden brown, 3 to 4 minutes per side. Transfer the chicken to a rimmed baking sheet. When cool enough to handle, remove the toothpicks.
    5. Step 5Transfer to the oven and roast until an instant-read thermometer registers 165ºF in the thickest part of the chicken, about 20 minutes.
    6. Step 6Meanwhile, add the butter and remaining 1 tablespoon olive oil to the drippings in the skillet and heat over medium. Add the shallots and cook, stirring occasionally, until softened and golden, 5 to 7 minutes. (Lower the heat slightly if they’re browning too quickly—you want them sweet and jammy, not crisp.)
    7. Step 7Add the garlic and red pepper flakes and cook until fragrant, about 30 seconds. Add the white wine and cook, scraping up any browned bits from the bottom of the pan, until reduced by half, about 2 minutes.
    8. Step 8Add the chicken broth and bring to a simmer. Cook until reduced by a third, about 3 minutes. Whisk in the heavy cream and cook, stirring occasionally, until thickened and the sauce coats the back of a spoon, 3 to 5 minutes.
    9. Step 9Remove from the heat and stir in the parmesan, lemon zest, and lemon juice. Stir until smooth and creamy. Taste and adjust salt if needed.
    10. Step 10Return the baked chicken to the skillet and spoon the sauce over the top. Let simmer gently for 1 minute so the flavors meld and the chicken is warmed through.
    11. Step 11Sprinkle with the basil and serve with crusty bread or rice to soak up the sauce.
