I love a good shortcut recipe, especially when it turns a handful of simple ingredients into something that looks and tastes like you spent a while making it. That's exactly what these beef enchilada empanadas do. They're packed with all the flavors of a classic beef enchilada—savory ground beef, enchilada sauce, green chiles, and melty cheese—but tucked inside a golden, flaky empanada crust. It's the best of both worlds!

One of my favorite things about this recipe is how easy it is to pull together. Frozen empanada wrappers do most of the heavy lifting, while the filling comes together in one skillet in just a few minutes. The beef mixture is rich, cheesy, and packed with Tex-Mex flavor. To balance all that savory, spicy goodness, the empanadas are served with a crisp lime slaw. The crunchy cabbage, fresh cilantro, and bright citrus dressing add the perfect fresh contrast to the warm, flaky pastries. It's the kind of combination that keeps you coming back for another bite. They're perfect for a fun weeknight dinner, a game-day snack, or an easy party appetizer.

Can you use homemade empanada dough?

Yes. Homemade empanada dough is a great option if you have the time. Frozen empanada wrappers make this recipe quicker and easier, but either choice will be delicious.


How do you keep empanadas from opening while baking?

Brush the edges of the dough with egg wash before folding, and use a fork to firmly crimp the edges. This helps seal in the filling and prevents leaks during baking.

Can you make beef enchilada empanadas ahead of time?

Yes! You can prepare and assemble the empanadas up to a day in advance. Store them covered in the refrigerator and bake just before serving. They're also a great make-ahead option for parties and game-day gatherings.

Can you freeze these beef enchilada empanadas?

Absolutely. Assemble the empanadas and freeze them unbaked on a baking sheet until firm. Transfer them to a freezer bag and freeze for up to 3 months. Bake straight from frozen, adding a few extra minutes to the baking time.

Ingredients

  • 3 Tbsp. olive oil
  • 1/2 red onion, half thinly sliced and half finely chopped
  • 1/2 lb. ground beef
  • 1 1/2 tsp. kosher salt
  • 1 Tbsp. all-purpose flour
  • 1 (10-ounce) can red enchilada sauce
  • 1 (4-ounce) can diced green chiles
  • 1/2 cup shredded Monterey Jack cheese (about 2 oz.)
  • 12 frozen empanada wrappers, thawed
  • 1 large egg, beaten
  • Juice of 1 lime
  • 1/2 tsp. black pepper
  • 1 (14-ounce) bag slaw mix
  • 3 Tbsp. fresh cilantro, chopped

Directions

    1. Step 1Position racks in the upper and lower thirds of the oven; preheat to 375°F. Line 2 baking sheets with parchment paper.
    2. Step 2Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the chopped red onion and cook until it starts to soften, about 2 minutes. Add the beef, season with 3⁄4 teaspoon salt and cook, breaking up the meat with a wooden spoon, until cooked through and browned, 3 to 5 minutes.
    3. Step 3Sprinkle the flour over the beef and continue cooking, stirring, for 1 minute. Stir in the enchilada sauce and chiles. Bring to a simmer and cook, stirring occasionally, until thickened, 2 to 3 minutes. Remove the pan from the heat and let cool slightly, about 5 minutes. Stir in the cheese.
    4. Step 4Roll out each empanada wrapper into a 5-inch round. Brush the beaten egg on the outer edges of each wrapper, then spoon about 1 1/2 tablespoons of the beef filling onto each, just off-center. Fold the wrappers in half to enclose the filling. Use a fork to crimp the edges to seal well.
    5. Step 5Arrange the empanadas on the prepared baking sheets, about 1 inch apart. Brush the tops with more beaten egg. Bake until golden brown, switching the pans halfway through, about 30 minutes.
    6. Step 6Meanwhile, whisk the lime juice, pepper, and the remaining 2 tablespoons olive oil and 3⁄4 teaspoon salt in a large bowl. Add the slaw mix, cilantro, and sliced red onion and toss to coat. Serve with the empanadas.
