When the temperatures start climbing, the last thing I want is a heavy pasta dinner (and I am a true pasta lover!). That's exactly why this gazpacho pasta has become one of my favorite warm-weather recipes. It takes everything I love about classic gazpacho—sweet ripe tomatoes, crisp cucumber, bell pepper, garlic, olive oil, and a splash of tangy sherry vinegar—and transforms it into a fresh, flavorful pasta dish that's perfect for summer.

Instead of simmering a traditional marinara sauce on the stove, the vegetables are pureed in a blender until silky smooth, creating a vibrant no-cook tomato sauce that coats every bite of the pasta. A colorful topping of olives, diced cucumber, herbs, and bell pepper adds plenty of texture, making every forkful even more delicious.

Serve it with plenty of crusty bread to soak up the extra sauce, and you've got a meal that's simple, satisfying, and made for hot summer days.

Do you serve gazpacho pasta hot or cold?

Gazpacho pasta is best served at room temperature or lightly chilled. After tossing the warm pasta with the fresh tomato sauce, let it cool slightly before adding the crunchy vegetable and olive topping. It's a great make-ahead recipe for picnics, potlucks, and warm-weather meals.

Can you make gazpacho pasta ahead of time?

Yes! You can prepare the tomato sauce up to two days in advance and refrigerate it until you're ready to use it. The finished pasta can also be made a few hours ahead and chilled. For the freshest flavor and texture, add the herb and vegetable topping just before serving.

How should you store leftover gazpacho pasta?

Leftover dressed pasta can be stored in an airtight container in the refrigerator for up to two days. For the best texture, store any extra topping separately and add it just before serving.

Ingredients

FOR THE SAUCE AND PASTA:

  • 3 cups grape tomatoes (about 22 oz.)
  • 1/3 cup extra-virgin olive oil,
  • plus more for drizzling
  • 3 Tbsp. sherry vinegar
  • 3 garlic cloves, minced
  • 3/4 English cucumber, peeled, seeded and roughly chopped
  • 3/4 red bell pepper, seeded and roughly chopped
  • 1/2 small red onion, minced
  • 1 1/2 tsp. kosher salt, plus more for the pasta water
  • 1/2 tsp. black pepper
  • 1 lb. farfalle

FOR THE TOPPING:

  • 1/2 cup sliced pimento-stuffed
  • manzanilla olives
  • 1/2 cup sliced black olives
  • 1/4 cup finely diced red bell pepper
  • 2 Tbsp. chopped fresh basil,
  • plus small leaves for garnish
  • 2 Tbsp. chopped fresh parsley
  • 1/4 English cucumber, peeled and diced
  • Crusty bread, for serving

Directions

  • 1. Make the sauce: Combine the tomatoes, olive oil, vinegar, garlic, cucumber, bell pepper, and red onion in a blender and puree until smooth. Season with the salt and pepper.

    2. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions. Drain well.

    3. Transfer the pasta to a large bowl. Pour the sauce on top and toss to coat.

    4. Make the topping: Mix together the manzanilla and black olives, bell pepper, basil, parsley, and cucumber in a medium bowl. Sprinkle over the pasta, drizzle with more olive oil and garnish with basil. Serve with bread.
