Blackened Salmon Burgers with Avocado-Lime Mayo

There are burgers, and then there are these blackened salmon burgers! If you're looking for a fresh twist on burger night, this recipe is one you'll want to keep on repeat. Instead of ground beef, tender chunks of salmon are pulsed together with panko, scallions, and a blend of smoky spices to create juicy patties that are crisp on the outside and flaky on the inside. They're cooked in a cast-iron skillet to develop that irresistible blackened crust, then piled onto toasted buns with all your favorite burger toppings.

The real star, though, is the creamy avocado-lime mayo. Made with ripe avocado, mayonnaise, fresh lime juice, and zest, it adds a cool, tangy contrast to the bold seasoning on the salmon.

Another reason I love these burgers? They're surprisingly easy to make. A food processor does most of the work, and the patties come together in no time. Pair them with potato chips, grilled corn, or a watermelon salad for an easy summer meal that's just a little more special than your average burger night.

Can you make these blackened salmon burgers ahead of time?

Yes! Form the patties up to one day in advance and refrigerate them until you're ready to cook. The avocado-lime mayo can also be made ahead, just be sure to press plastic wrap directly onto the surface to help prevent the avocado from browning.

Can you cook these salmon burgers on a grill?

Because the patties are made from fresh chopped salmon rather than ground meat, they're more delicate than beef burgers. A cast-iron skillet is the easiest way to achieve a crisp exterior while keeping the burgers intact. If you prefer to grill them, cook them on a well-oiled grill pan or on a piece of grill-safe foil on the grill over medium heat.

Ingredients

FOR THE AVOCADO-LIME MAYO:

  • 1/3 cup mayonnaise
  • 1/2 tsp. kosher salt, plus more to taste
  • Grated zest and juice of 1 large lime
  • 1 large avocado

FOR THE SALMON BURGERS:

  • 1 Tbsp. kosher salt
  • 4 tsp. sweet paprika
  • 2 tsp. garlic powder
  • 2 tsp. onion powder
  • 1 tsp. dried oregano
  • 1 tsp. black pepper
  • 1/2 tsp. cayenne pepper
  • Cooking spray
  • 2 lb. skinless salmon fillets, cut into 1-inch chunks
  • 3 Tbsp. mayonnaise
  • 1/2 cup panko
  • 4 scallions, sliced
  • 1/4 cup vegetable oil
  • 6 potato hamburger buns, split
  • Sliced tomatoes, sliced red onion, and lettuce leaves, for topping
  • Potato chips, for serving

Directions

    1. Step 1For the avocado-lime mayo: Puree the mayonnaise, salt, lime zest and juice, and the avocado in a food processor until smooth. Season with more salt, if needed. Scrape into a bowl and press plastic wrap on the surface; refrigerate until ready to serve. Wipe out the food processor.
    2. Step 2For the burgers: Mix the salt, paprika, garlic and onion powders, oregano, black pepper, and cayenne in a bowl.
    3. Step 3Preheat the oven to 350˚F. Line a baking sheet with parchment paper and spray with cooking spray. Pulse half of the salmon in the food processor until chopped into small pieces. Transfer to a large bowl. Add the remaining salmon to the processor along with the mayonnaise; blend until mostly smooth. Add to the chopped salmon, along with the panko, scallions, and half of the spice mix. Mix well.
    4. Step 4Form the salmon mixture into six 4-inch patties on the baking sheet. Season both sides with the remaining spice mix. Put the buns cut-side up on a second baking sheet. Bake until toasted, 5 minutes.
    5. Step 5Heat 2 tablespoons oil in a large cast-iron skillet over medium-high heat. Add 3 patties and cook until browned, 3 to 4 minutes per side. Wipe out the skillet; repeat with the remaining oil and patties. Serve on the buns with the avocado-lime mayo, tomatoes, onion, and lettuce. Serve with chips.
