- 2 lb. ripe tomatoes (any variety), chopped (about 5 cups)
- 1 jalapeño, seeded and minced
- 1/2 sweet onion, finely diced
- 1 cup granulated sugar
- 1/3 cup light brown sugar
- 3 Tbsp. apple cider vinegar
- 1 Tbsp. grated fresh ginger
- 3/4 tsp. kosher salt
- 1/4 tsp. ground coriander
- 1/4 tsp. ground cumin
- Pinch of ground cinnamon
Directions
- Step 1In a medium saucepan, combine the tomatoes, jalapeño, sweet onion, granulated sugar, light brown sugar, apple cider vinegar, ginger, salt, coriander, cumin, and cinnamon over medium-high heat. Bring the mixture to a boil, stirring occasionally.
- Step 2Reduce the heat to medium-low and simmer gently, stirring occasionally at first and more frequently as the jam thickens. You will need to stir constantly during the last 10 minutes of cooking. Cook until the jam is very thick, glossy, and jammy with no large chunks, 1 hour 15 minutes to 1 hour 30 minutes. To test for doneness, drag a spoon across the bottom of the pan—the line should hold briefly before filling in. The jam will continue to thicken as it cools.
- Step 3Let the jam cool completely, then transfer to a clean airtight container. Refrigerate for up to 2 weeks.
