But one busy morning, when I wanted something a little more portable, I started dreaming up a way to bring those same cozy, buttery pancake flavors into a grab-and-go treat. Enter these blueberry pancake muffins! They’ve got everything you love about a classic stack—tender crumb, juicy berries, and just the right touch of sweetness—baked into a fluffy muffin that’s easy to make ahead.

These are especially perfect for springtime gatherings like Easter brunch or Mother’s Day, when you want something a little extra special on the table without a lot of fuss. And let me tell you, that sweet maple glaze drizzled over the top? It’s what really seals the deal, giving each muffin that unmistakable pancake-and-syrup finish.

Whether you’re hosting brunch or just need a little morning pick-me-up, these muffins are a sweet, simple way to make any day feel a bit more special.

Ingredients

FOR THE MUFFINS:

  • 2 cups all-purpose flour
  • 2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/2 tsp. kosher salt
  • 1 cup buttermilk, at room temperature
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 large egg, at room temperature
  • 1 Tbsp. vanilla extract
  • 1 1/2 cups blueberries

FOR THE GLAZE:

  • 2 cups powdered sugar
  • 2 Tbsp. milk
  • 1 Tbsp. salted butter, melted and slightly cooled
  • 1 Tbsp. brewed coffee
  • 1/2 tsp. maple flavoring
  • Pinch of kosher salt

Directions

    1. Step 1Make the muffins: Preheat the oven to 375˚F. Line a 12-cup muffin pan with paper liners. Whisk together the flour, baking powder, baking soda and salt in a medium bowl. Set aside.
    2. Step 2Whisk together the buttermilk, granulated sugar, vegetable oil, egg and vanilla in a large bowl until smooth. Add the dry ingredients and stir gently with a rubber spatula until the batter just comes together. Fold in the blueberries.
    3. Step 3Divide the batter evenly among the muffin cups. Bake until the muffins are golden brown and spring back when gently pressed, 25 to 28 minutes. Let cool 10 minutes in the pan, then remove to a rack to cool completely, about 30 minutes.
    4. Step 4Make the glaze: Whisk together the powdered sugar, milk, melted butter, coffee, maple flavoring and salt in a medium bowl until smooth. Spoon generously over the muffins. Let set, about 10 minutes.
