Chocolate-covered bacon is one of those things that sounds absolutely bonkers until you try it. Then after one bite you’ll wonder how you’ve lived this long without it. Just imagine crispy, smoky, thick-cut bacon coated in luscious milk chocolate and sprinkled with crunchy, salted nuts. It’s the definition of decadence and such a fun, easy-to-make treat for special occasions like Father’s Day. I’d even serve it at a fancy party!

What kind of chocolate is best for chocolate-covered bacon?

You can use semisweet or dark chocolate, but my favorite here is milk chocolate. It’s a little milder and sweeter than the other two, and it complements the smoky, salty flavor of the bacon perfectly. Here’s a quick rundown of different types of chocolate if you need it!

How do you keep chocolate-covered bacon crispy?

The key is to cook the bacon until it’s good and crisp from the start. Once it’s done, pat off any excess grease and let it cool completely before adding the chocolate. If the bacon is still warm, the chocolate won’t set properly, and the bacon can lose some of that crisp texture.

How do you store chocolate-covered bacon?

Store it in an airtight container in the refrigerator, with layers of parchment or wax paper between the pieces to keep the chocolate neat and pretty. It will keep for up to three days, which means you can easily make it ahead!

Ingredients

  • 1 lb. thick-cut bacon (about 12 slices)
  • 1 cup milk chocolate chips (about 8 oz.)
  • 2 tsp. shortening
  • 1/3 cup salted roasted nuts (such as pecans, almonds, or peanuts), roughly chopped

Directions

    1. Step 1Preheat the oven to 400°F and line a baking sheet with foil. Line a second baking sheet with parchment or wax paper.
    2. Step 2Arrange the bacon slices in a single layer on the foil-lined baking sheet and bake until crisp (not chewy), 25 to 30 minutes. Transfer to a paper towel–lined plate or baking sheet and lightly pat the bacon with a paper towel to remove excess grease.
    3. Step 3Meanwhile, in a small microwave-safe bowl, microwave the chocolate chips and shortening in 15-second intervals, stirring between each, until smooth.
    4. Step 4Using a silicone pastry brush, generously brush both sides of each bacon slice with the melted chocolate, leaving about 2 inches at one end uncovered. Place the slices on the parchment-lined baking sheet.
    5. Step 5Sprinkle both sides of each bacon slice with nuts. Refrigerate until the chocolate is set, 15 to 20 minutes.
