What is cowboy casserole?
Cowboy casserole is a hearty, family-friendly comfort food that's layered with all kinds of delicious ingredients. This version starts with a creamy filling of ground beef, onions, garlic, spinach, corn, and cream of mushroom soup. It's topped with plenty of shredded cheese, a layer of crispy tater tots, and a sprinkle of parmesan before baking until bubbly and golden brown. To finish it off, crispy bacon and fresh chives add the perfect savory crunch and pop of flavor. It's an easy one-pan dinner that's filling, cozy, and guaranteed to be a hit around the table.
What else can you add to cowboy casserole?
This dish is easily customizable! For an extra veggie kick, you could stir cooked or canned green beans, frozen peas, or sautéed bell pepper into the filling when you add the corn. Or try kicking up the heat with diced jalapeño or diced green chiles.
Can you make cowboy casserole in a baking dish?
Yes! If you don't have an oven-safe skillet like a cast-iron skillet, you can make the filling in any pan, then transfer it to a 13-by-9-inch baking dish. Simply top it with cheese and tater tots and bake as directed.
Can you make cowboy casserole ahead of time?
Yes! Cowboy casserole is a great make-ahead meal. Prepare the beef filling up to 1 day in advance, then let it cool completely and refrigerate it in an airtight container or cover the skillet tightly. When you're ready to serve, warm the filling gently on the stovetop over medium heat, then top it with the shredded cheese, tater tots, and parmesan. Bake as directed until the casserole is hot and bubbly and the tater tots are perfectly crisp and golden.

Ingredients
- 1 (32-oz.) bag of tater tots
- 4 strips of bacon (about 3 oz.)
- 1/2 yellow onion, chopped
- 2 cloves garlic, chopped
- 1 lb. ground sirloin
- 1 (10.75-oz.) can cream of mushroom soup
- 3/4 cup milk
- 1/2 tsp. salt
- 3/4 tsp. ground black pepper, divided
- 3 cups baby spinach, roughly chopped
- 1 cup frozen corn
- 8 oz. shredded cheddar or colby jack cheese
- 1/4 cup grated parmesan cheese
- Chopped chives or scallions, for topping
Directions
- Step 1Preheat the oven to 375˚F. Remove the tater tots from the freezer to let them thaw slightly while you prepare the filling.
- Step 2Heat a large cast-iron skillet over medium heat. Add the bacon and cook until golden brown and extra crispy, 6 to 8 minutes. Remove to a paper towel–lined plate, leaving the grease in the skillet.
- Step 3Add the onion to the skillet with the grease and cook until slightly softened, about 4 minutes. Add the garlic and cook 1 minute more. Add the ground beef and cook, breaking it into small pieces with a wooden spoon, until no pink pieces remain, 6 to 8 minutes. Drain off the excess fat, if you like. Remove the skillet from the heat. Stir in the soup, milk, salt, and ½ teaspoon black pepper; mix until smooth. Fold in the spinach to wilt slightly. Stir in the corn.
- Step 4Sprinkle the cheddar cheese evenly over the top of the casserole. Place the tater tots on top in a single layer, arranging them in concentric circles (or just toss them on and push them very close together). Sprinkle the top with the parmesan cheese and the remaining 1/4 teaspoon of black pepper.
- Step 5Bake until he tater tots are golden, 30 to 35 minutes. Remove from the oven and crumble the cooked bacon over top. Let rest 5 minutes. Top with chopped chives or scallions and serve.
