Crispy Potato, Chorizo, and Cheddar Frittata

If Marlboro Man could design the perfect breakfast, this crispy potato, chorizo, and cheddar frittata might be it. It’s so hearty and satisfying, and it comes together pretty quickly all in one big skillet with spicy chorizo, bell pepper, golden potatoes, and fluffy, cheesy eggs. While it’s cooking, brew a pot of coffee, pop some toast or canned biscuits (Ladd’s favorite!) in the oven, and toss together one of these fruit salad recipes for a full Father’s Day spread. What can you use instead of chorizo?

Any ground sausage will work great in this frittata. You can use mild or hot breakfast sausage, Italian sausage, or even turkey sausage for something a little lighter.

How long does crispy potato, chorizo, and cheddar frittata last in the fridge?

It will stay good for up to three days. To store, let the frittata cool, then transfer it to an airtight container and pop it in the fridge. Reheat the frittata in a 325-degree Fahrenheit oven, covered, for 10 to 15 minutes until hot, or warm individual slices in the microwave.

Ingredients

  • 3 Tbsp. olive oil
  • 1 lb. Yukon Gold or russet potatoes (about 3 small), very thinly sliced
  • 1 1/2 tsp. kosher salt
  • 12 large eggs
  • 1/3 cup half-and-half
  • 2 cups shredded cheddar cheese (about 8 oz.)
  • Black pepper, to taste
  • 8 oz. fresh chorizo, casings removed
  • 1 orange bell pepper, chopped
  • 4 scallions, thinly sliced
  • 3 garlic cloves, finely chopped

Directions

    1. Step 1Preheat the oven to 400˚F. Heat the olive oil in a 12-inch ovenproof skillet over medium-high heat. Add the potatoes, spreading them out, and season with 1⁄4 teaspoon salt. Cook, undisturbed, until golden brown and crisp on the bottom, about 7 minutes. Flip the potatoes, sprinkle with another 1⁄4 teaspoon salt and continue to cook, flipping and reducing the heat as needed, until crisp all over, 8 to 10 more minutes. Transfer the potatoes to a plate.
    2. Step 2Meanwhile, whisk the eggs, half-and-half, 1 cup cheese, the remaining 1 teaspoon salt and a few grinds of pepper in a large bowl.
    3. Step 3Return the skillet to medium-high heat. Add the chorizo and cook, stirring and breaking it up into smaller pieces, until browned in spots, about 3 minutes. Add the bell pepper and scallions (reserve some of the green parts for garnish) and cook, stirring, until softened, about 3 minutes. Add the garlic and cook until fragrant, about 1 minute.
    4. Step 4Add the potatoes and egg mixture to the skillet and stir well to evenly distribute. Cook, undisturbed, until the frittata is just set around the edges, about 2 minutes. Sprinkle with the remaining 1 cup cheese, then transfer to the oven and bake until golden and set in the center, 10 to 15 minutes. Let cool 5 minutes in the skillet, then top with the reserved scallion greens.
