This sheet pan sausage, egg, and hash brown recipe is the easiest doggone full-blown breakfast you may ever make. Plus, it's tremendously good!
Just toss some frozen hash browns, kale, and red onion on a sheet pan and bake it for about 15 minutes. Pull it out of the oven and add some sausage links and cracked eggs to the pan, bake it a few more minutes, then add some cheese, and a bake it a little more. While that's happening, pop a few slices of bread in your toaster, pour some orange juice, or brew some coffee, and before you know it breakfast is ready.

Can you replace the sausage with bacon or another protein?
Yes, you can switch up the protein, as long as what you choose is fully cooked! You’re really only baking the meat in this recipe long enough to warm it through. Fully cooked sausage patties, cubed ham, or bacon all work well. If you're going the bacon route, try one of these recipes for air fryer bacon or oven-cooked bacon, or just fry it in a skillet on the stove the old-fashioned way! Serve it on the side with the sheet pan breakfast or crumble it over the top.
Can you make sheet pan sausage, egg, and hash brown breakfast ahead of time?
This breakfast is best served just after it comes out of the oven so the hash browns are crisp and the eggs are perfectly cooked. If you want to get ahead, you can chop the kale and slice the onion a day or two in advance and store them in separate air-tight containers in the fridge. Make sure the sausage is thawed and ready to go, too.
If you have leftovers, they can be stored in an airtight container in the refrigerator for up to three days and reheated in the microwave or in a 350-degree Fahrenheit oven until warmed through. For the best results, store your leftovers without the eggs and crack fresh eggs on top when reheating.

Ingredients
- 14 oz. frozen shredded hash browns (about 3 cups)
- 4 cups packed chopped kale
- 1 red onion, cut into 1/4-inch wedges
- 2 Tbsp. olive oil
- 1/2 tsp. kosher salt, plus more to taste
- 1/4 tsp. black pepper
- 10 to 12 frozen fully-cooked breakfast sausage links, thawed
- 6 large eggs
- 1 cup shredded cheddar cheese (about 4 ounces)
- Toasted bread, for serving
Directions
- Step 1Preheat the oven to 400 ̊F. Toss together the hash browns, kale, red onion, olive oil, salt, and pepper on a large rimmed baking sheet.
- Step 2Bake until the onion is softened and the hash browns are starting to brown, about 15 minutes. Remove from the oven and stir, then add the sausages to the baking sheet.
- Step 3Make 6 spaces on the baking sheet and gently crack an egg into each space. Sprinkle each egg with a pinch of salt. Bake for 4 minutes.
- Step 4Remove the baking sheet from the oven and sprinkle the cheese on top. Bake until the egg whites are set but the yolks are still runny, 2 to 4 minutes more. Serve with toasted bread.
