Nothing brings Ladd and crew back to the house faster than steak and eggs. This is my go-to cowboy breakfast and for a good reason. It's hearty and filling—just what a rancher needs after working cattle all morning.

I cook thin steaks to medium-rare in a big cast-iron skillet. Once they're done, I crack in a few eggs, letting them cook sunny-side up in all that glorious flavor left behind. Pop some bread in the toaster while the eggs finish up and before you know it, you've got a full-blown, cowboy-approved breakfast!

The secret to this recipe is the steak rub that goes on the beef. There's salt and pepper, smoky paprika and cumin, some garlic and onion powder, and a little bit of brown sugar, which helps the steaks caramelize and get a nice crust. I like to make a big batch and keep it in the spice cabinet—it's also great on chicken. What's the best cut of steak for steak and eggs?

I love using thin-cut ribeye steaks, about 1/2-inch thick. They cook up super fast—just about a minute per side—and have the perfect amount of marbling. That fat brings tons of flavor, which is exactly what you want in a hearty breakfast like this. If ribeye isn't your thing, a New York strip is another great option—it's leaner, but still tender and delicious.

Ingredients

  • 1 1/2 tsp. kosher salt, plus more for seasoning
  • 1 tsp. paprika
  • 1/2 tsp. cumin
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1/2 tsp. black pepper, plus more for seasoning
  • 1/2 tsp. brown sugar
  • 2 thin ribeye steaks (1/2 inch thick; 7 to 8 ounces each)
  • 2 Tbsp. salted butter, plus more for serving
  • 4 large eggs
  • 4 slices buttered toast

Directions

    1. Step 1In a small bowl, combine the salt, paprika, cumin, garlic powder, onion powder, pepper, and brown sugar. Pat the steaks dry with a paper towel and season both sides generously with the spice mix. Let them sit at room temperature for 30 minutes.   
    2. Step 2Heat a large cast-iron or heavy-bottomed skillet over medium heat. Add 1 tablespoon of the butter and let it sizzle and start to brown. Add the steaks and cook to medium-rare, about 1 minute per side. Transfer to plates and let them rest.
    3. Step 3Wipe out the skillet, reduce the heat to medium-low, then add the remaining 1 tablespoon butter. Crack the eggs into the skillet, keeping them separate, and cook until done to your liking, about 4 minutes for soft sunny–side up. Season with salt and pepper.
    4. Step 4Serve the steaks and eggs with buttered toast.
