This breakfast burrito casserole takes everything you love about a hearty breakfast burrito—spicy sausage, cheesy eggs, crispy potatoes, and a kick of jalapeño—and turns it into one big, make-ahead bake that feeds a crowd. It’s the ultimate weekend brunch hero or a cozy weekday breakfast when you want something hearty and full of flavor. The best part? You can assemble it the night before, stash it in the fridge, and pop it in the oven when you wake up.

I love to scoop a big serving into a warm tortilla, roll it up, and top it with salsa, a dollop of sour cream, or a few slices of avocado. It’s hearty enough to satisfy cowboys and cowgirls or sleepy teenagers alike! Whether you’re hosting brunch, prepping for a busy week, or just craving a Tex-Mex twist on breakfast, this casserole is your new go-to. Serve it with a big fruit salad, and you have a complete meal. Make it once, and it’ll earn a permanent spot in your breakfast rotation!

Can you make breakfast casserole burritos ahead of time?

Absolutely! One of the best parts about this casserole is that you can prepare it up to 2 days in advance. Just cover it tightly with foil and refrigerate. When you’re ready to bake, pop it in the oven straight from the fridge—no morning stress required!

What should you serve with breakfast casserole burritos?

I love to top these loaded eggs with salsa, sour cream, or avocado slices before I wrap them up in a warm tortilla. The burritos are also delicious with a side of fruit or a green salad for a holiday brunch.

Can you freeze breakfast casserole burritos?

Yes! To freeze the casserole, bake it first, then let it cool completely before wrapping it tightly in foil and freezing for up to 3 months. To reheat, thaw the casserole overnight in the fridge and warm it in a 350°F oven until hot and bubbly. To freeze individual burritos, wrap each one tightly in foil or plastic wrap and store them in a freezer-safe bag or container in the freezer for up to 2 months. To reheat, unwrap and microwave on a plate until heated through, 2 to 3 minutes. Or, reheat the burritos wrapped in foil in a 350°F oven for 25 to 30 minutes.

Ingredients

  • 2 Tbsp. olive oil, plus more for the baking dish
  • 1 lb. bulk breakfast sausage
  • 1 (28-ounce) bag frozen diced potatoes with peppers and onions
  • 1 cup milk
  • 1/2 cup sour cream
  • 1/2 tsp. seasoned salt (such as Lawry’s)
  • 1/4 tsp. freshly ground black pepper
  • 4 large eggs
  • 4 green onions, sliced
  • 1 red bell pepper, diced
  • 2 cups grated pepper jack cheese (about 8 ounces)
  • 1 cup grated sharp cheddar cheese (about 4 ounces)
  • 1/2 cup jarred pickled jalapeño slices
  • 8 large flour tortillas, for serving
  • Salsa, for serving
  • Sliced avocados, for serving

Directions

    1. Step 1Preheat the oven to 350°F. Grease a 9-by-13-inch baking dish with olive oil.
    2. Step 2In a large skillet, heat the oil and cook the sausage over medium heat, breaking the meat up with a wooden spoon, until browned and cooked through, 8 to 10 minutes. Remove to a plate.
    3. Step 3Add the potatoes to the drippings in the skillet and cook over medium heat, turning occasionally, until warmed through, about 12 minutes. Add the potatoes and sausage to the prepared baking dish.
    4. Step 4In a large bowl, whisk the milk, sour cream, seasoned salt, black pepper, and eggs. Stir in the green onions, bell pepper, 1 cup of the pepper jack, and 1/2 cup of the cheddar. Pour the egg mixture over the potato and sausage mixture, then top with the remaining 1 cup pepper jack and 1/2 cup cheddar. Place the jalapeño slices over the top. Cover with foil and refrigerate until you are ready to cook and serve. The uncooked casserole will keep in the refrigerator for up to 2 days.
    5. Step 5Bake the casserole, covered, for 25 minutes. Remove the foil and continue to bake until the cheese is brown and bubbly and the casserole is cooked through, another 20 to 35 minutes. Allow to cool for 10 minutes.
    6. Step 6Warm the tortillas and set out the salsa. Scoop an eighth of the casserole straight into a warm tortilla, top with salsa, and serve with sliced avocado.
