Gosh, I love waffles. Golden, crispy, drenched in syrup and butter—aren't they wonderful? No offense to other waffle recipes, but these gingerbread waffles are quite possibly some of the most festive, delicious ones I've ever tasted. You might just start humming Christmas carols after the first bite. Don’t say I didn’t warn you.

These waffles have a magical blend of spices and molasses and are perfect for Christmas morning itself or the days leading up. You can drizzle 'em with syrup or make a simple glaze like you'd find on gingerbread cookies! Just don't skip the pat of butter on top. That's nonnegotiable. Here are a handful of other gingerbread recipes to continue the holiday fun!

Do you have to whip the egg whites for these waffles?

Trust me on this: It makes all the difference! Whipped egg whites give the batter extra lift, which is the secret to waffles that are crisp and golden on the outside and impossibly light, airy, and tender on the inside. This has been my tried-and-true method for years, ever since I perfected my original waffle recipe. Once you try it, you'll never make 'em any other way!

Can you make gingerbread waffle batter ahead of time?

Yep! The batter can be mixed together up to one day in advance and stored in the refrigerator, covered tightly. Let it sit at room temperature for about 20 minutes, then whisk it gently before using. If the batter seems a little thick, add a splash of buttermilk to loosen it up.

You can also cook the waffles ahead of time, let them cool, and keep them in an airtight container in the refrigerator for up to 3 days. To reheat, place the waffles directly on the oven rack at 350°F for 5 to 7 minutes, or pop them in the toaster for a crisp finish. See the tip box below the recipe for freezing info!

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup dark brown sugar
  • 2 tsp. ground ginger
  • 1 1/2 tsp. baking powder
  • 1 1/2 tsp. ground cinnamon
  • 3/4 tsp. baking soda
  • 1/4 tsp. ground cloves
  • 1/4 tsp. ground nutmeg
  • 1/2 tsp. kosher salt
  • 1 1/2 cups buttermilk, at room temperature
  • 2 Tbsp. molasses
  • 1 Tbsp. plus 1 teaspoon vanilla extract
  • 2 large eggs, separated, plus 2 egg whites, at room temperature
  • 8 Tbsp. (1 stick) salted butter, melted, plus softened butter, for serving
  • 1/2 cup powdered sugar (optional), plus more for dusting
  • Warm syrup, for serving
  • Sweetened whipped cream, for serving (optional)

Directions

    1. Step 1Preheat a waffle iron to the regular setting.
    2. Step 2In a large bowl, sift together the flour, brown sugar, ginger, baking powder, cinnamon, baking soda, cloves, nutmeg, and salt. In a medium bowl, whisk together the buttermilk, molasses, vanilla, and egg yolks. Pour over the dry ingredients and very gently stir until halfway combined. Pour in the melted butter and continue mixing very gently until combined.
    3. Step 3In a separate large bowl, use a whisk (or an electric mixer) to beat the 4 egg whites until stiff. Slowly fold them into the batter, stopping short of mixing them all the way through.
    4. Step 4Scoop the batter into the waffle iron in batches and cook according to the machine directions (lean toward the waffles being deeply golden and crisp!).
    5. Step 5If making the glaze, whisk together the powdered sugar with 1 tablespoon of water in a medium bowl. Add more water, 1 teaspoon at a time, until a smooth, pourable consistency is achieved.
    6. Step 6Serve the waffles immediately with softened butter, warm syrup or the glaze, sweetened whipped cream (if using), and a dusting of powdered sugar.

Tip: Cooked waffles freeze well. Arrange them in a single layer on a baking sheet and freeze until solid, then transfer to freezer bags with parchment paper between layers. Reheat from frozen in a 350°F oven for 10 minutes, or in the toaster until hot and crisp.
