Cottage cheese blended with the eggs, which makes them incredibly creamy and fluffy without any fuss. A sprinkle of green onions adds a fresh pop, while a dash of hot sauce gives them a little kick if you like things spicy. Ingredients
- Cooking spray
- 6 slices bacon
- 1 cup cottage cheese (full-fat or low-fat)
- 8 large eggs
- 3/4 tsp. kosher salt
- 1/2 tsp. black pepper
- Hot sauce (optional)
- 3/4 cup shredded pepper jack cheese (about 3 ounces)
- 2 (4-ounce) cans chopped green chile peppers, drained and patted dry
- 4 green onions, thinly sliced
Directions
- Step 1Preheat the oven to 350˚F. Generously spray a 12-cup muffin tin with cooking spray.
- Step 2Cook the bacon in a medium skillet over medium heat, flipping occasionally, until browned and crispy, 5 to 7 minutes. Transfer to a paper towel–lined plate to cool, then crumble.
- Step 3Puree the cottage cheese in a blender until smooth and creamy, about 1 minute. Add the eggs, salt, pepper and a dash or two of hot sauce, if using. Blend until smooth.
- Step 4Mix together the pepper jack, green chiles, green onions and all but 1 tablespoon of the bacon in a medium bowl. Divide the mixture among the muffin cups (about 2 tablespoons each) and pour in the egg mixture. Sprinkle with the reserved bacon. Bake until the eggs are just set, 25 to 30 minutes. Let cool for 5 minutes, then remove the egg bites from the pan.
