There’s just something about a big, bubbly pan of funeral potatoes that feels like a warm hug from the inside out. Creamy, cheesy, and topped with a buttery crunch, this classic comfort dish has been showing up at potlucks, holidays, and yes—even post-funeral gatherings—for generations. And once you take a bite, you’ll understand exactly why.
My version keeps things simple but extra delicious, with tender hash browns folded into a rich, savory sauce and finished with an irresistible golden potato chip topping. It’s the kind of side dish that quietly steals the spotlight at the dinner table—no matter what else you’re serving.
Perfect for feeding a crowd, this casserole is easy to make ahead and always a hit with family and friends. Whether it’s a holiday feast or a cozy Sunday dinner, these potatoes belong right in the middle of it all.
Why are they called funeral potatoes?
The dish got its name from being a comforting casserole commonly served at post-funeral and church gatherings, especially in the Midwest and among Mormon communities.
Can you make funeral potatoes ahead of time?
You sure can, and you should! This casserole can be assembled up to 24 hours in advance. Make the potato mixture, spread it in the baking dish, cover, and refrigerate. When ready to bake, remove it from the refrigerator and let it sit at room temperature for 30 minutes. Add the potato chip topping and bake as directed, adding a few extra minutes if needed. It can also be fully baked ahead, cooled, and refrigerated for up to 3 days; reheat covered at 350°F until warmed through, uncovering briefly at the end to re-crisp the top.
Can you freeze funeral potatoes?
Yes! To freeze, assemble the casserole without the topping, wrap it tightly, and freeze for up to 2 months. When ready to use, thaw overnight in the refrigerator, add the topping, and bake as directed.
You can also freeze funeral potatoes after baking. Cool completely, wrap well, and freeze. Reheat covered at 350°F until hot.

Ingredients
- 1/2 cup (1 stick) salted butter
- 1 (28- to 32-ounce) bag frozen shredded hash brown potatoes
- 1 medium onion, finely diced
- 1/4 cup all-purpose flour
- 1 cup milk
- 2 cups low-sodium chicken broth
- 1 1/2 tsp. kosher salt
- 3/4 tsp. black pepper
- 1 1/2 cups shredded Monterey jack cheese (about 6 ounces)
- 1 cup sour cream
- 1/2 cup shredded sharp cheddar cheese (about 2 ounces)
- 2 cups crushed kettle-cooked potato chips (4 ounces)
- 1/4 cup grated parmesan cheese (about 1 ounce)
Directions
- Step 1Preheat the oven to 350°F. Grease a 9-by-13-inch baking dish with 1 tablespoon of the butter. Take the hash brown potatoes out of the freezer while you are preparing the rest of the ingredients.
- Step 2Heat a large, deep skillet over medium-high heat, then melt 6 tablespoons butter in it. Add the onions and cook, stirring occasionally, until they start to soften, 3 to 4 minutes. Sprinkle the flour over the onions and stir to incorporate. Cook for 1 to 2 minutes to cook out the raw flour, but do not let it color. Whisk in the milk, making sure to get out all the lumps. Add the chicken broth and whisk again if there are still lumps. Bring the mixture to a simmer and allow it to thicken, about 3 minutes. Add the salt and pepper.
- Step 3Turn off the heat and stir in the Monterey jack, sour cream, and cheddar cheese. Add the hash brown potatoes and mix everything together. Transfer the mixture to the prepared baking dish.
- Step 4Melt the remaining 1 tablespoon butter in a small saucepan or the microwave. Put the potato chips and parmesan in a bowl. Pour in the melted butter and toss to coat. Sprinkle the chip mixture over the top of the potato mixture.
- Step 5Cover the dish with foil and bake for 20 minutes, then remove the foil and continue baking until golden brown on top and bubbling around the edges, about 15 minutes more. Let rest for 15 minutes before serving.
