There’s something magical about a really good vegetable side that quietly steals the spotlight, and this lemon roasted asparagus does exactly that. Inspired by my love of bright, fresh flavors (and recipes that keep things easy in the kitchen), this dish is all about letting a few humble ingredients shine.

Roasting asparagus in a hot oven brings out its natural sweetness and gives the spears irresistible golden edges, while fresh lemon zest and juice add a citrusy pop. It’s a simple combination that feels a little special every time.

You can’t go wrong with an asparagus recipe in spring. What I love most about this one is how easily it comes together—perfect for busy weeknights, Easter dinner, or when you just need a fresh green side on the table in a hurry. The homemade lemon salt adds a little something special (trust me, don’t skip it!), and a sprinkle of parsley at the end makes everything taste fresh.

What temperature is best for roasting asparagus?

A high temperature—425°F to 450°F—is ideal for roasting asparagus. It allows the spears to become tender while developing lightly crisp, golden edges.

Can you use bottled lemon juice instead of fresh lemons?

Fresh lemons are highly recommended for this recipe. The combination of fresh lemon juice and zest gives the asparagus a vibrant, citrusy flavor that bottled juice just can’t match.

How do you keep asparagus from getting soggy in the oven?

Spread the asparagus in a single layer on a baking sheet and avoid overcrowding. Roasting at a high temperature also helps keep the texture crisp-tender instead of soft.

Ingredients

  • 2 lemons
  • 1 tsp. kosher salt
  • 3 lb. asparagus, trimmed
  • Olive oil, for drizzling
  • 1 cup fresh parsley, chopped

Directions

    1. Step 1Grate the zest of the lemons. Spread out the zest on a plate and let it air-dry slightly, about 30 minutes.
    2. Step 2Preheat the oven to 450˚F. Mix the lemon zest with the salt in a small bowl and set aside. Cut the lemons in half and set aside.
    3. Step 3Divide the asparagus between 2 baking sheets, drizzle with olive oil and toss to coat. Roast until the asparagus is tender and starting to color, 8 to 10 minutes. Transfer the asparagus to a platter.
    4. Step 4Before serving, squeeze the lemons over the asparagus, drizzle with more olive oil and sprinkle with the lemon salt and parsley.
