If there’s one thing I love, it’s a big, beautiful salad that eats like a full meal—and this salmon niçoise salad is just that, friends. It’s fresh, colorful, and packed with all kinds of good things, from tender roasted salmon to crisp green beans and buttery fingerling potatoes. You’ve got those classic niçoise flavors going on—briny olives, jammy eggs, and a punchy mustard dressing—but with a little easy, home-cook twist that makes it totally doable any night of the week.
The salmon is simply seasoned with lemon pepper and roasted until perfectly flaky. And that creamy lemon dressing? Oh my goodness—it ties everything together with bright, herby flavor, thanks to fresh parsley and tarragon.
I love serving this salad when I want something light but still satisfying (and maybe a little bit fancy without trying too hard!). It’s perfect served with some fresh bread and iced tea for lunch on the porch or a casual dinner with the family. Just pile everything onto a platter, drizzle on that dreamy dressing, and watch it disappear. Trust me—this one’s a keeper!
What is a salmon niçoise salad?
This salad is a fresh twist on the classic French niçoise salad, traditionally made with tuna. This version features flaky roasted salmon, tender potatoes, crisp green beans, hard-boiled eggs, olives, and tomatoes, all tossed with a bright lemon-Dijon dressing.
Can you make salmon niçoise salad ahead of time?
You can prep most components ahead—cook the salmon, potatoes, green beans, and eggs, and make the dressing up to a day in advance. Store them separately and assemble just before serving for the best texture.

Ingredients
- 1 3/4 lb. skinless salmon fillet, preferably center cut
- 1 tsp. lemon pepper seasoning
- 1 1/4 tsp. kosher salt, plus more to taste
- 12 oz. fingerling potatoes, halved
- 12 oz. green beans, trimmed
- 3 Tbsp. fresh lemon juice
- 1 Tbsp. mayonnaise
- 1 small garlic clove, finely chopped
- 2 tsp. capers in brine, drained and chopped
- 2 tsp. Dijon mustard
- 5 Tbsp. olive oil
- 1/4 cup fresh parsley, chopped
- 1 Tbsp. chopped fresh tarragon
- 2 hearts romaine lettuce, chopped
- 3 hard-boiled eggs, quartered
- 1 cup grape tomatoes, halved
- 1/2 cup pitted kalamata olives
Directions
- Step 1Preheat the oven to 450˚F. Season the salmon on both sides with the lemon pepper and 1 teaspoon salt and place on a foil-lined baking sheet. Bake until the salmon is just cooked through, 12 to 14 minutes, depending on the thickness. Let cool while you prepare the rest of the salad.
- Step 2Bring a large saucepan of salted water to a boil. Add the potatoes and cook until almost tender, about 8 minutes. Add the green beans and cook until both the potatoes and green beans are tender, 4 to 5 minutes more. Drain and rinse under cold running water until cool. Pat very dry. Place in a medium bowl.
- Step 3For the dressing: Whisk the lemon juice, mayonnaise, garlic, capers, mustard, and remaining ¼ teaspoon salt in a small bowl until smooth. Whisk in the olive oil to make a creamy dressing. Whisk in the parsley and tarragon.
- Step 4Assemble the salad: Put the romaine in a large bowl. Drizzle with about half of the dressing, season with salt, and toss well. Drizzle the potatoes and green beans with a tablespoon or two of dressing and toss. Divide the romaine among plates. Flake the salmon into chunks and place on top of the salads. Add the potatoes and green beans, eggs, tomatoes, and olives. Drizzle with any remaining dressing before serving.
