I’ve always had a soft spot for asparagus with hollandaise—it’s one of those classic combinations that never goes out of style. And on the flip side, I’ll take just about any excuse to add a little Cajun seasoning to a dish. So it was only a matter of time before the two came together in this bold, slightly spicy twist on the original. The result is roasted asparagus that’s tender and just a little crisp on the edges, topped with a rich, buttery hollandaise that has a gentle kick and plenty of flavor.

This Cajun asparagus with hollandaise sauce feels special enough for holidays like Easter or Mother’s Day, but it’s easy enough to make anytime. The asparagus roasts quickly in the oven, and the blender hollandaise comes together in minutes, which makes the whole dish surprisingly simple. It’s also a great option for Sunday brunch, especially if you’re serving eggs, ham, or a big spread of sides. And if you’re just looking for a way to dress up a weeknight dinner, this recipe does the trick. It’s familiar, a little unexpected, and guaranteed to get people talking at the table.

How do you keep asparagus from getting soggy when roasting?

Roast your asparagus at a high temperature (around 450°F) and spread it in a single layer on the pan. This helps it caramelize and stay tender-crisp instead of steaming, which is what can sometimes make it soggy.

Can you make Cajun asparagus with hollandaise sauce ahead of time?

Hollandaise is best served fresh, but you can keep it warm for up to one hour if you need to prep ahead a bit. Reheat it gently in a double boiler over warm water if needed, whisking to maintain a smooth texture. You can roast the asparagus up to one day ahead of time and store it in the fridge until you're ready to reheat and serve.

Ingredients

For the Asparagus:

  • 3 bunches asparagus (about 3 pounds), ends trimmed
  • 1/4 cup olive oil
  • 1/2 tsp. Cajun seasoning

For the Hollandaise:

  • 2 sticks salted butter
  • 4 large egg yolks
  • Juice of 1 lemon
  • 1 tsp. Cajun seasoning, plus more for garnish
  • 1/2 tsp. black pepper
  • 1/4 tsp. hot sauce

Directions

    1. Step 1For the asparagus: Preheat the oven to 450˚F. Divide the asparagus between 2 baking sheets, drizzle with the olive oil, sprinkle with the Cajun seasoning and toss to coat. Roast until the asparagus is tender and starting to color, 8 to 10 minutes. Transfer to a platter.
    2. Step 2For the hollandaise: Melt the butter in a small saucepan until sizzling. Pull out the blender and add the egg yolks to it. Add the lemon juice to the blender. Then, with the blender on, slowly drizzle in the hot butter. The sauce will start to thicken right away.
    3. Step 3Add the Cajun seasoning, pepper and hot sauce to the blender and mix it again until it’s all combined. If the sauce is too thick, add a few teaspoons warm water until it’s thin enough to pour.
