Grilled Chicken With Alabama White Sauce

Sometimes all it takes is one really good sauce to turn a dish as simple as grilled chicken into something you can’t quit thinking about, and that’s exactly the case here. Alabama white sauce is a creamy, tangy, divine concoction that falls under the barbecue sauce umbrella, but is completely different from any sauce you’ve ever tried. It’s been around since 1925, when Robert “Big Bob” Gibson first stirred it together in Decatur, Alabama, and I’d say the man was absolutely onto something.
The magic of this sauce is all in the balance. It’s rich and creamy from the mayonnaise, bright and zippy from the lemon juice and vinegar, and it gives grilled chicken so much flavor that you’ll want to drizzle extra on everything else on your plate, too. Best of all, it helps keep the chicken nice and moist.
This dish is classically served with pickles and a slice of white bread, but it’s scrumptious with all your typical barbecue sides—potato salad, baked beans, and coleslaw included.
Can you use any cut of chicken for this recipe?
Bone-in, skin-on chicken usually works best for grilled chicken recipes because it stays juicier and has more flavor than boneless, skinless cuts. If you don’t want to cut up a whole fryer, you can use chicken leg quarters, wings, thighs, drumsticks, or breasts, as long as they’re bone-in and skin-on. Whatever cut or combination you choose, you’ll need about 4 pounds total. Since different cuts cook at different rates, use a meat thermometer to check for doneness and aim for an internal temperature of 165 degrees Fahrenheit.

Ingredients
For the white sauce:
- 1 cup mayonnaise
- 1 Tbsp. fresh lemon juice
- 1 Tbsp. apple cider vinegar
- 1 tsp. Dijon mustard
- 1 tsp. prepared horseradish (optional)
- 1 tsp. packed light brown sugar
- 1 tsp. Worcestershire sauce
- 1 garlic clove, finely chopped
- 1 tsp. black pepper
- 1/2 tsp. kosher salt
- 1/8 tsp. cayenne pepper
For the chicken:
- 4 tsp. kosher salt
- 1 Tbsp. black pepper
- 2 tsp. paprika
- 1 1/2 tsp. garlic powder
- 1 1/2 tsp. onion powder
- 1/2 tsp. cayenne pepper
- 1 4-pound fryer chicken, cut into 8 pieces
- Vegetable oil, for the grill
Directions
- Step 1For the white sauce: Whisk together the mayonnaise, lemon juice, vinegar, mustard, horseradish (if using), brown sugar, Worcestershire sauce, garlic, black pepper, salt, and cayenne in a medium bowl. Reserve ¼ cup of the sauce for brushing the chicken; cover and refrigerate the remaining sauce for serving.
- Step 2For the chicken: Whisk together the salt, black pepper, paprika, garlic powder, onion powder, and cayenne in a small bowl. Pat the chicken dry and sprinkle liberally on all sides with the spice mixture.
- Step 3Preheat a grill to medium high and prepare for indirect grilling: On a charcoal grill, bank the coals to one side; on a gas grill, turn off half the burners. Oil the grates.
- Step 4Place the chicken skin-side down over direct heat. Cover and cook until marked and the chicken easily releases from the grill, 6 to 8 minutes.
- Step 5Flip the chicken and move to indirect heat (the cooler side of the grill). Cover and cook until an instant-read thermometer inserted into the chicken registers 165˚F, 30 to 40 more minutes, depending on the size of your chicken pieces. During the last 5 minutes of cooking, flip the chicken and brush with the reserved ¼ cup white sauce.
- Step 6Transfer the chicken to a platter, cover with foil and let rest for at least 10 minutes. Serve with the remaining white sauce.
