Burger night gets a summer makeover with these pork burgers topped with grilled peaches and feta. The combination might sound unexpected at first, but one bite and it all makes sense. Sweet, smoky peaches, salty feta, tangy pickled onions, and fresh basil are piled onto juicy pork patties to create a burger that's packed with flavor and perfect for warm-weather cookouts.

Ground pork makes the patties especially juicy, while a little panko, milk, Worcestershire sauce, and grated onion keep them tender from the inside out. The peaches get lightly charred on the grill until they're caramelized and bursting with sweetness, making them the perfect partner for the rich pork and creamy feta.

I also love the simple Dijon-mayo spread, which adds just enough richness and tang to tie everything together. Serve these grilled pork burgers on toasted buns with a big handful of potato chips, a green salad, and a glass of sweet tea, and you've got the kind of easy summer dinner that feels special without being fussy.

Why use ground pork for burgers?

Ground pork makes incredibly juicy, flavorful burgers thanks to its higher fat content. It has a richer taste than ground turkey and stays tender on the grill, making it a great choice for summer cookouts.

Can you grill canned or frozen peaches?

Fresh, ripe peaches are best for grilling because they hold their shape and develop beautiful grill marks. If fresh peaches aren’t available, you can substitute ripe plums or nectarines.

Can you make pork burger patties ahead of time?

Yes. Form the patties up to 24 hours in advance and store them covered in the refrigerator until you're ready to grill.

Ingredients

  • 1 small onion, grated on the large holes of a box grater
  • 1/4 cup panko
  • 2 Tbsp. milk
  • 1 Tbsp. Worcestershire sauce
  • 1 tsp. black pepper
  • 2 1/4 tsp. kosher salt
  • 2 lb. ground pork
  • 1/4 cup mayonnaise
  • 2 Tbsp. Dijon mustard
  • 3 ripe peaches, halved and pitted
  • 1 Tbsp. vegetable oil, plus more for the grill
  • 1 (6-ounce) block feta cheese, cut into 6 slices
  • 6 hamburger buns, split and toasted
  • Pickled red onions (store-bought or homemade) and fresh basil leaves, for topping
  • Potato chips, for serving

Directions

    1. Step 1Combine the onion, panko, milk, Worcestershire sauce, pepper, and 2 teaspoons salt in a large bowl. Let sit until the liquid is fully absorbed, about 5 minutes. Add the pork and gently mix into the panko mixture.
    2. Step 2Divide the mixture into 6 balls (about 6 ounces each), being careful not to overwork the meat. Press into 1-inch-thick patties (about 4 1⁄2 inches wide).
    3. Step 3Combine the mayonnaise and mustard in a small bowl.
    4. Step 4Brush the peaches with the vegetable oil and sprinkle with the remaining 1⁄4 teaspoon salt. Preheat a grill or grill pan to medium high and oil the grates. Grill the peaches cut-side down until marked, 3 to 5 minutes. Flip and continue cooking until tender, 2 to 3 more minutes. Remove to a cutting board and let cool slightly, then slice.
    5. Step 5Grill the patties, covered, until well marked and an instant-read thermometer registers 160°F, 6 to 7 minutes per side. Top each with a slice of feta during the last minute of cooking and cover to melt.
    6. Step 6Spread the mayonnaise mixture on the top and bottom buns. Place a burger patty on each bottom bun and top with pickled onions, some peaches, fresh basil, and the top bun. Serve with potato chips.
