What is burrata?
Burrata is a fresh Italian cheese made from cow's milk (and sometimes buffalo milk). It has a mozzarella exterior filled with a rich, creamy center called stracciatella. Originally from the Puglia region of Italy, burrata was once found mostly in Italian markets and specialty cheese shops. Today, it's widely available in the specialty cheese section of most grocery stores. Its mild flavor and creamy texture pair especially well with ripe summer fruit like tomatoes, melon, and the juicy peaches in this salad.
Are there any easy substitutions for peach and burrata salad?
Yes, this salad is easy to customize based on what you have. If you can’t find burrata, fresh mozzarella packed in water or mozzarella pearls make nice substitutes, though the salad will be a little less creamy. If you're looking to recreate that creamy texture, dollops of whole-milk ricotta are another great option.
As for the prosciutto, you can leave it out for a vegetarian salad or swap in very thinly sliced deli ham. For the fruit, use whatever is at its peak—nectarines, apricots, melon, or cherries all work well in place of the peaches.

- 1 baguette, sliced 1/2 inch thick (about 16 slices)
- 1/4 cup olive oil
- 1 tsp. flaky sea salt, plus more to taste
- 1/2 tsp. black pepper, plus more to taste
- 4 tsp. white wine vinegar
- 1/2 tsp. Dijon mustard
- 1/2 tsp. honey
- 1/4 tsp. crushed red pepper flakes
- 1 small shallot, sliced
- 4 ripe peaches, sliced
- 8 oz. burrata, at room temperature
- 1/4 cup fresh basil leaves
- 2 oz. thinly sliced prosciutto, torn into bite-size pieces (optional)
Directions
- Step 1Preheat the oven to 400˚F.
- Step 2Arrange the bread on a baking sheet, brush with 2 tablespoons of the olive oil, and sprinkle with ½ teaspoon flaky sea salt and ¼ teaspoon black pepper. Toast until golden, 4 to 5 minutes per side.
- Step 3Meanwhile, in a medium bowl, whisk together the vinegar, Dijon, honey, red pepper flakes, shallot, the remaining ½ teaspoon flaky sea salt and ¼ teaspoon black pepper. Let sit at least 5 minutes to soften the shallot, then whisk in the remaining 2 tablespoons olive oil. Add the peaches and gently toss to coat.
- Step 4Transfer the peaches to a serving platter, reserving any dressing left in the bowl. Tear the burrata into large pieces and arrange over the peaches. Spoon the remaining dressing over the top and season lightly with flaky sea salt and black pepper. Scatter the basil over the salad and tuck the prosciutto around the peaches and burrata, if using. Serve with the crostini.
