This chocolate buttercream is so delicious it should be illegal. In fact, I think it is in some states. It’s ridiculously rich, perfectly sweet, and so smooth and luscious that it glides on any cake or cupcake like a dream. The secret ingredient is espresso powder, which isn’t exactly a secret if you’ve made some of my other favorite chocolate desserts. Espresso has this magical power of making chocolate taste even more chocolaty, without any lingering coffee flavor. You only need a little bit, and boy, does it make all the difference.

This buttercream lasts for up to 2 weeks in the fridge or 3 months in the freezer—and it somehow gets even darker, richer, and more delicious with time. I like to make it at least a day ahead. Keep some on hand for future chocolate desserts, birthday cakes, sheet cakes, or anytime you need a big spoonful of pure, unadulterated decadence.

How much chocolate buttercream does this recipe make?

This recipe makes 6 cups of buttercream, which is enough to frost an 8-inch layer cake, a 9-by-13-inch sheet cake, or 24 cupcakes. The recipe can be halved or doubled depending on your needs!

Why is Dutch-process cocoa best for chocolate buttercream?

Dutch-process cocoa gives you an extra-dark, velvety chocolate buttercream. It’s treated to tame cocoa’s natural acidity, giving it a smoother, richer flavor without any sharpness. Regular unsweetened cocoa will work fine, but Dutch-process is worth tracking down—and not just for buttercream! You can use it in all kinds of chocolate treats, like these Oreo brownies.

Look for it in the baking aisle near the regular cocoa powder. If your grocery store doesn’t carry it, check a specialty food shop or search for it online.

Can you use milk instead of heavy cream in chocolate buttercream?

Yes, you can. I prefer heavy cream because it gives you a richer, silkier frosting, but whole milk will work in a pinch.

Ingredients

  • 2 cups (4 sticks) salted butter, at room temperature
  • 1 cup unsweetened cocoa powder (preferably Dutch-process), sifted
  • 1/2 tsp. instant espresso powder
  • 5 cups powdered sugar, sifted, plus more as needed
  • 3/4 cup heavy cream, plus more as needed
  • 1 Tbsp. vanilla extract
  • 1/4 tsp. kosher salt

Directions

    1. Step 1In a stand mixer fitted with the paddle attachment, beat the butter on medium-high speed until creamy and lightened in color, about 5 minutes, scraping down the sides of the bowl as necessary.
    2. Step 2Add the cocoa powder, espresso powder, half of the powdered sugar, and half of the cream to the bowl. Beat on low speed until incorporated, then add the remaining powdered sugar, remaining cream, vanilla, and salt. Beat on low until just mixed through, then increase the speed to medium-high and beat until the frosting is fluffy and has lightened in color, 3 minutes. Scrape down the sides and bottom of the bowl, being sure to catch any rogue powdered sugar or cocoa, and mix on low speed for about 1 minute more. If the frosting seems thicker than you’d like, you can thin it out by adding extra cream, 1 tablespoon at a time. If it seems thinner than you’d like, add extra powdered sugar, ¼ cup at a time.
    3. Step 3The buttercream can be used immediately, or covered tightly and stored at cool room temperature for up to 48 hours (I like to press a piece of plastic wrap right on the surface of the buttercream to prevent crusting). It will keep, refrigerated, for up to 2 weeks, and frozen for up to 3 months. If chilled, bring the buttercream to room temperature and give it a good stir before using, adding a splash of cream if necessary, to bring it back to a fluffy, smooth consistency.
