There’s nothing quite like a platter of sticky, saucy ribs to make everybody gather around the table fast. These oven baked BBQ ribs are one of my favorite comfort food dinners because they deliver so much of the savory flavor of barbecue without needing a smoker—or even a grill! The ribs bake low and slow in the oven until they’re unbelievably tender, then get slathered with a rich homemade sauce that’s sweet, tangy, and just a little bit smoky. A quick trip under the broiler at the end helps the sauce caramelize and gives the ribs irresistible crispy edges.

I love making these ribs for summer cookouts, football weekends, and family dinners. The best part is how simple they are. The oven does most of the work, which means you can relax while the ribs become fall-off-the-bone tender. Serve them with baked beans, potato salad, cornbread, or a big pile of coleslaw for the ultimate barbecue feast.

What kind of ribs work best for oven baked ribs?

Baby back ribs and St. Louis-style ribs are both great options for this recipe. Baby back ribs tend to be leaner and slightly more tender, while St. Louis-style ribs are meatier and extra flavorful.

Can you make oven baked ribs ahead of time?

Absolutely. You can bake the ribs one day ahead, refrigerate them, and then reheat them with barbecue sauce just before serving. They’re perfect for parties, game days, and easy entertaining.

Can you use store-bought barbecue sauce for oven baked ribs?

Sure! It’s hard to beat the sweet, tangy, savory flavor of a homemade barbecue sauce simmered with onion, garlic, molasses, vinegar, and Worcestershire. But if you’re short on time, a store-bought version is an easy shortcut.

Ingredients

FOR THE RIBS:

  • 2 Tbsp. kosher salt
  • 1 Tbsp. black pepper
  • 1 Tbsp. brown sugar
  • 2 tsp. garlic powder
  • 2 tsp. onion powder
  • 2 tsp. smoked paprika
  • 2 racks baby back ribs (about 5 lb.)

FOR THE BBQ SAUCE:

  • 2 Tbsp. salted butter
  • 2 garlic cloves, minced
  • 1/2 onion, diced
  • 1/2 tsp. kosher salt, plus more to taste
  • 1 (20-ounce) bottle ketchup
  • 1/3 cup molasses
  • 1/3 cup brown sugar
  • 1/3 cup apple cider vinegar
  • 1 Tbsp. yellow mustard
  • 1 Tbsp. Worcestershire sauce

Directions

    1. Step 1Preheat the oven to 300˚F. Mix together the salt, black pepper, brown sugar, garlic powder, onion powder, and smoked paprika in a small bowl.
    2. Step 2Flip the ribs bone-side up. Use a knife to loosen the membrane, then pull the membrane off. Rub the spice mix on both sides of the ribs.
    3. Step 3Wrap both racks of ribs together (side by side) in a large piece of foil, sealing the edges and seams to make an airtight package. Place the packet on a rimmed baking sheet and roast 2 to 2½ hours.
    4. Step 4Melt the butter in a saucepan over medium heat. Add the garlic, onion, and salt; cook until softened. Add the ketchup, molasses, brown sugar, vinegar, mustard, and Worcestershire sauce. Bring to a simmer, stirring. Reduce the heat to low and cook until thickened, 20 minutes. Let cool 5 minutes, then puree the sauce until smooth. Thin with water if needed. Season with salt.
    5. Step 5When the ribs are done, transfer to a foil-lined baking sheet and brush with sauce on both sides (use 1 to 1½ cups).
    6. Step 6Preheat the broiler. Broil the ribs until charred in spots, about 5 minutes. Brush with more sauce; continue broiling until bubbling, 3 more minutes. Serve with more sauce.
