Sloppy joes have always been one of those wonderfully messy, stick-to-your-ribs dinners that feel like pure comfort—and this lentil version holds a special place in my heart. Back in my Los Angeles college days, I was a vegetarian, and I learned pretty quickly that you can make a hearty, flavorful, and satisfying meal with just about anything—you just have to get the seasonings right. This lentil sloppy joe reminds me of that time in the best way: familiar, cozy, and surprisingly filling.

Brown lentils simmer until tender, then soak up a rich, tangy sauce made with ketchup, brown sugar, Worcestershire sauce, chili powder, and a hint of mustard. Garlic, onion, and green bell pepper create that classic sloppy joe flavor base, while a splash of apple cider vinegar at the end brightens everything up. The texture is hearty and saucy, with just the right balance of sweet and savory—so much so that even devoted meat lovers won’t miss a thing.

Spoon the lentil mixture onto toasted hamburger buns and you’ve got a dinner that’s comforting, budget-friendly, and weeknight-easy. Serve it with crunchy potato chips on the side and dinner is done. It’s proof that vegetarian comfort food can be just as crave-worthy as the classics—and sometimes even more memorable!

Do lentils really work as a meat substitute in these sloppy joes?

Can you make lentil sloppy joes ahead of time?

Absolutely. The lentil mixture can be made up to 3 days in advance and reheated on the stove before you pile it onto the buns.

Is this lentil sloppy joe recipe vegan?

This recipe can easily be made vegan. Opt for a vegetarian or vegan Worcestershire sauce and serve it on vegan buns to keep the recipe fully plant-based.

Ingredients

  • 1 cup dried brown lentils, rinsed and picked through 
  • 3 Tbsp. olive oil 
  • 3 garlic cloves, minced 
  • 1 small green bell pepper, diced 
  • 1/2 onion, diced 
  • 1 tsp. kosher salt 
  • 1/2 tsp. black pepper 
  • 1 cup ketchup 
  • 1 Tbsp. packed light brown sugar 
  • 2 tsp. Worcestershire sauce (vegetarian, if desired) 
  • 1 1/2 tsp. chili powder 
  • 1 tsp. soy sauce 
  • 3/4 tsp. mustard powder 
  • 1/2 tsp. red pepper flakes (optional) 
  • 1 tsp. apple cider vinegar 
  • 6 hamburger buns
  • Potato chips, for serving 

Directions

    1. Step 1Combine the lentils and 3 cups water in a medium pot. Bring to a boil over high heat, then reduce to a simmer and cook until almost tender but not fully cooked through, about 15 minutes. Drain and set aside. 
    2. Step 2Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the garlic, bell pepper, onion, salt, and pepper and cook, stirring occasionally, until the vegetables are softened, 5 to 7 minutes. 
    3. Step 3Stir in the ketchup, brown sugar, Worcestershire sauce, chili powder, soy sauce, mustard powder, and red pepper flakes (if using). Stir in 2 cups water and bring to a simmer. Add the cooked lentils and simmer, stirring often, until the mixture thickens, deepens in color, and the lentils are fully tender, about 15 minutes. Stir in the cider vinegar. Taste and adjust the seasoning as needed.
    4. Step 4Heat the remaining 1 tablespoon olive oil in a griddle or large skillet over medium heat. Working in batches, place the buns cut-side down in the pan and toast until golden brown, 1 to 2 minutes. Spoon the lentil mixture onto the buns and serve with chips.
