Who needs beef tacos? Okay, Mauricio Scott probably still misses them. But Alex Drummond is already getting creative in the kitchen!
Alex recently shared a quick dinner idea on Instagram that’s clearly inspired by her husband, Mauricio’s’ Alpha-Gal diagnosis, which means red meat and other mammal products are off the table for him for now. Instead of traditional taco meat, Alex made a turkey version that still looked plenty delicious.
“Whipped up some YUMMY taco meat (with ground turkey of course 😂😂),” she wrote over a photo of the skillet.
Alex kept the recipe simple: one onion, two jalapeños, one can of pinto beans, one pound of ground turkey, and taco seasoning to taste. That’s it! She served the mixture with rice and cheese, and it even earned a very important stamp of approval from Sofia.
“I thought it would be too spicy for her but it wasn’t too bad!” Alex wrote, adding that she’d seen a video claiming jalapeños are getting less spicy and now thinks “it might be true.”
The whole thing is a sweet little update after a not-so-fun few weeks for Mauricio. Alex previously shared that his Alpha-Gal symptoms started with severe stomach pain after eating red meat, including a burger, steak tacos, and brisket. After bloodwork confirmed the diagnosis, he’s had to avoid beef, pork, and other mammal meats. Poor Mauricio! That’s a tough adjustment for anyone, but especially for someone who married into a cattle ranching family.
According to the CDC, Alpha-Gal syndrome is a tick-related allergy that can cause reactions after eating red meat or being exposed to products that contain alpha-gal. Symptoms can show up hours later, which can make the connection tricky to spot.
The good news is that Alex already seems ready to keep the taco nights going. Ground turkey to the rescue!
