A cattle-ranching family without steak night is going to need a very good alternative dinner idea. Fortunately, Mauricio Scott has one—and it comes in a bowl!
Alex Drummond recently shared a peek at the salmon bowls she and her husband, Mauricio, made for dinner, but she handed hosting duties over to her husband for the evening. “Mauricio really took the lead on this recipe so I’m letting him give you the rundown,” she wrote on Instagram stories. Mauricio happily stepped in with the grand introduction: “For tonight’s Alpha-Gal dinner, we have salmon bowls.”
The meal comes after Mauricio was diagnosed with Alpha-Gal syndrome, a tick-related allergy that has taken beef, pork, and other mammal meats off his plate for now. His symptoms first appeared as severe burning stomach pain after eating a burger, steak tacos, and brisket, but Alex has shared that he can still eat fish without any trouble. That has required some adjustment—Mauricio is a longtime lover of burgers and ribs, after all—but the Scotts have already kept taco night alive with ground turkey. Salmon bowls are a pretty good next move!
Mauricio’s version started with sushi rice and cubed salmon, including both farm-raised and wild varieties. Then came the good stuff: avocado, edamame, shredded carrots, green onions, chili oil, and what he called a “really yummy Asian cucumber salad.” He finished the lineup with homemade spicy mayo, giving everyone plenty of options to pile on top—or, in Alex’s case, mix into one big delicious jumble.
“I like to stir mine all together but Mauricio gets more points for presentation 😂,” Alex wrote alongside a photo of their finished bowls. And she wasn’t kidding! Mauricio’s had each topping neatly arranged in its own little section, while hers looked thoroughly mixed and ready to eat. Different methods, same dinner!
There aren’t exact measurements here, but that’s part of the appeal. Add rice to a bowl, top it with cooked salmon, and set out whatever fresh vegetables and sauces sound good. It’s colorful, customizable, and proof that Mauricio’s new red meat-free dinner routine can still include plenty of meals worth getting excited about.
