Alex Drummond has found the grown-up version of hot dogs and boxed mac and cheese. Well, *slightly* grown-up. It still involves sausage, cheesy noodles, and very little effort—but we’re not complaining!

Alex recently shared the dinner she’s been making whenever a comfort-food craving hits: Goodles Shella Good aged white cheddar mac and cheese mixed with sliced Aidells Italian-style smoked chicken sausage. “This has been my go-to comfort dinner when I’m craving comfort food 😂😂,” she wrote on Instagram Stories. “It’s like a healthier version of sliced hot dogs & kraft mac n cheese I guess?? Don’t judge.” She also gave the sausage a very enthusiastic review: “This chicken sausage is soooo good.”

There isn’t much of a recipe here and that’s the beauty of it! Alex prepared the mac and cheese, heated and sliced the chicken sausage, then stirred everything together in one pot. The Goodles noodles have 14 grams of protein and 7 grams of fiber per serving, according to the box, while the sausage adds even more protein without introducing red meat—an important consideration since Mauricio’s Alpha-Gal diagnosis. It’s warm, cheesy, filling, and ready without a cutting board full of ingredients or a sink full of dishes.

The final test came from Sofia, who apparently shares her mom’s appreciation for a good bowl of mac and cheese. “As you could probably guess this is also ~toddler approved~,” Alex wrote over a photo of the finished meal.

At eight months pregnant, with a toddler to feed and a household adjusting to red meat-free dinners, Alex has plenty of reasons to keep an easy meal like this in rotation. It may not be fancy, but the yummiest things never are!
