When Alex Drummond and her husband, Mauricio, were getting ready to embark on their Cabo babymoon and fifth anniversary trip, Alex had just one goal for the getaway: lounge and eat. And, according to her Instagram posts, she definitely achieved it! On the first day alone, the couple enjoyed all the delicious coastal cuisine—and particularly, desserts—that their resort, the Waldorf Astoria Los Cabos Pedregal, had to offer.
On their first day in “paradise,” as Alex called it, the married couple got acquainted with the resort by soaking up the scenic waterfront views before taking a sip on their welcome drinks (hibiscus water for Alex and a classic margarita for Mauricio) on lounge chairs that overlooked the ocean. Once they went back to their hotel room, they were greeted by the sweetest surprise: a bouquet of blue flowers “for baby boy” and a plate of macarons with the words, “Happy babymoon,” written in chocolate.
At the end of this picture-perfect day, Alex changed into a black maxi dress, paired with a beige shawl and a beaded blue necklace, before she joined Mauricio for a laid-back dinner at the resort. After the duo ordered the local catch of the day, the waitstaff hand-delivered them an adorable mini cake in honor of their babymoon. The bite-sized treat was covered in frosting, while the top was garnished with rainbow sprinkles reminiscent of confetti and teardrop-shaped candies in shades of pink and blue. The dessert was finished off with the most thoughtful touch: edible banners that said, “Happy Babymoon.”
Too cute, right? Well, if you’re hoping to recreate it at home for an upcoming gender reveal, a baby shower, or just any ol’ evening when the craving strikes, The Pioneer Woman herself has an easy recipe for three-ingredient mini cakes that’s similar to Alex and Mauricio’s little treat. All you’ll need is pound cake, any filling of your choosing (like Nutella or cookie butter), and a whipped topping. Once you layer and ice these mini cakes, you can decorate them in any way you see fit: shredded coconut, sugar pearls, colorful sprinkles, etc.
While their first day in Cabo was full of sweet surprises, there were even more in store for Alex and Mauricio on the rest of their tropical getaway. Just a few days later, on the day of their wedding anniversary, they indulged in more desserts. At dinner that night, they received a wooden serving tray with “Happy Anniversary!” spelled out in white icing, which showcased a mini chocolate cake decorated with fresh strawberries and a sparkler candle. Behind the spread was another chocolaty treat, which was also adorned with strawberries, plus a heaping mound of whipped cream on top.
